The Ultimate German Chocolate Gooey Butter Cake Recipe

Have you ever tried the famous St. Louis Gooey German? Here’s my new favorite version of the easy cake recipe using store bought cake mix. It’s the ultimate German Chocolate Gooey Butter Cake!

Fun fact, German chocolate cake isn’t actually from Germany! It’s just named after the guy who invented the chocolate used in the cake! 

The original cake can be traced back to 1852. When American baker Samuel German developed a type of dark baking chocolate. The brand name of the product, Baker’s German’s Sweet Chocolate, was named in his honor.

In the 1950s, a recipe for German’s Chocolate Cake was published & as time went on, the ‘s was dropped. Today, German Chocolate Cake is a national staple.

Another popular American dessert is the ooey gooey butter cake! Traditionally made in St. Louis Missouri, it’s kind of a cross between a cake and a brownie.

I first heard about it during the reign of the butter queen Paula Deen. But gooey butter cake was actually created by accident in the 1930s by a German baker in St. Louis! The baker was trying to make a regular cake but mixed up the proportions of butter and flour, resulting in the decadent dessert we’re making today!

Rather than use yellow cake mix, I thought we should revisit the German chocolate cake origin story! I adapted Paula Deen’s Original Gooey Butter Cake Recipe slightly & it’s literally so easy to make.

How to Make German Chocolate Gooey Butter Cake

Ingredients:

1 box German Chocolate Cake Mix

3 Eggs

1/2 cup of butter (melted)

1 block of cream cheese (8 oz, softened)

1/4 cup hot cocoa mix

2 cups powdered sugar

Directions:

This is a 2 layer cake. Start with the first layer by mixing the dry cake mix, melted butter and 1 egg (don’t follow any of the directions on the box). I used my stand mixer, but a hand mixer will also work.

I like lining my baking dishes wish parchment paper to make it easier to remove & slice. Press the mix into the bottom of a prepared baking dish. I recommend using a 9×13” baking dish.

In separate bowl mix the cream cheese, remaining eggs, cocoa mix and powdered sugar. Then pour it on top of the first layer.

Bake at 350F for about 45 minutes. Be sure not to overcook it! The center should still be a gooey! Let it cool for at least 15 minutes before slicing and serving.

Ingredients

  • 1 BOX GERMAN CHOCOLATE CAKE MIX
  • 3 EGGS
  • 1/2 CUP BUTTER MELTED
  • 8 OZ CREAM CHEESE
  • 1/4 CUP HOT COCOA MIX
  • 2 CUPS POWDERED SUGAR

Instructions

  • PREHEAT YOUR OVEN TO 350F.
  • PREPARE YOUR BAKING DISH BY LINING WITH PARCHMENT PAPER OR FOIL
  • MIX DRY CAKE MIX, MELTED BUTTER & 1 EGG. PRESS MIXTURE INTO BAKING DISH & SPEAD EVENLY. THE MIXTURE WILL BE A THICK DOUGH, USING A SPATULA OR BACK OF A SPOON WORKS TO SPREAD IT EVENLY.
  • IN A SEPARATE BOWL, MIX CREAM CHEESE, REMAINING EGGS, COCOA MIX & POWDERED SUGAR. MIX ON MEDIUM SPEED FOR A FEW MINUTES UNTIL WELL COMBINED. THEN POUR THE MIXTURE ON TOP OF THE FIRST LAYER IN THE BAKING DISH.
  • BAKE FOR ABOUT 45 MINUTES. DO NOT OVER-BAKE, YOU WANT THE CENTER TO STILL BE GOOEY!
  • LET THE CAKE COOK FOR AT LEAST 10 MINUTES BEFORE CUTTING INTO SQUARES AND SERVING.
