PB&J Ice Cream Sandwiches Recipe

Peanut Butter & Jelly Sandwiches are one of the most iconic and nostalgic foods. They’re simple but delicious. Easy to make and relatively inexpensive because they only require 3 ingredients that are pantry staples.

So to elevate those classic flavors, I used homemade peanut butter cookies and raspberry sorbetto to make gourmet PB&J ice cream sandwiches. Or as I’m calling them, sorbetto sandos!

PB&J Ice Cream Sandwiches

The components of a PB&J ice cream sandwich are simple. You have cookies and ice cream.

What makes these so tasty is the combination of a fresh batch of peanut butter cookies and raspberry sorbet (or gelato). I opted for sorbet to make them vegan & dairy free. But gelato would also be amazing. The key is to find an “ice cream” that is light, tart & sweet. I used Talenti Raspberry Sorbet.

You can definitely use store bought or bakery peanut butter cookies.

Also, you can make these “to order” – meaning make one when you want to eat it. Or, make a bunch of them and freeze them. I made about a dozen and froze them in an airtight container.

A few other ice cream sandwich ideas:

  • If you’re using store bought cookies, make sure to find ones that are on the hard / crunchy side. Soft batch cookies will fall apart more easily.
  • You can make smaller cookies to make smaller, bite sized ice cream sandwiches!
  • If you’re not a peanut butter fan, try another nut butter!
  • It’s easier to scoop the ice cream onto the flat side of the cookie & will look better.
  • If you’re a fan of the peanut butter and jelly ice cream sandwich, try different berry ice cream or gelato flavors!
  • You can also use vanilla ice cream and a tablespoon of jam if you can’t find berry gelato.
  • Using slightly softened ice cream makes scooping and squishing easier.
  • You can use a small baking sheet to line the cookies up and place into the freezer.
Crunch Peanut Butter Cookies Recipe

PB&J Ice Cream Sandwiches

Ingredients

  • 2 1/2 Cups flour
  • 1/2 Tspn baking soda
  • 1/2 Tspn baking powder
  • 1/2 Tspn salt
  • 1/2 Cup salted butter
  • 1 Cup granulated sugar
  • 1 1/4 Cup crunchy peanut butter
  • 2 eggs
  • 1 Tbs vanilla
  • Raspberry Gelato

Instructions

  • Preheat your oven to 350F.
  • Mix flour, baking soda, baking powder & salt in a medium bowl.
  • In a large bowl or stand mixer, combine the remaining ingredients & mix on medium speed for about 3 minutes.
  • Line a baking sheet with parchment paper. Scoop dough onto with a spoon (about the size of a golf ball) and place at least 2 inches apart.
  • Use a fork to press the dough, repeating a few times until the cookie is flat.
  • Bake for 10-12 minutes or until the edges start to brown.
  • Cool completely on a wire rack.
  • After cookies have cooled, use an ice cream scoop to add a heaping spoonful of raspberry gelato on top of one cookie. Top with another cookie and press down. Eat or freeze in an airtight container!
