Have you ever tried stroopwafel cookies?

A stroopwafel cookie is a traditional Dutch treat that consists of two thin, circular waffle-like cookie layers with a caramel filling in between.

The word “stroopwafel” translates to “syrup waffle” in English. Stroopwafels have a sweet and slightly chewy texture.

Traditionally, stroopwafels are served by placing them on top of a hot cup of coffee or tea. The steam from the hot drink slightly softens the waffle, making it easier to bite into while the syrup becomes warm and gooey.

How to Make This No Bake Dessert

I had some leftover stroopwafel cookies, so I decided to make them into a candy! The combination of chocolate, marshmallow & caramel cookie tastes a lot like a s’more!

You don’t need an oven or any fancy equipment.

Just start by chopping your cookies up into bite sized pieces. It’s fine if they’re uneven and kind of “rustic”. You just want them to be in small pieces! I chopped up 6 cookies. But you can easily make a smaller or larger batch.

I love using Ghirardelli melting chocolate. You can just dump the bag into a microwave safe bowl, follow the directions on the package & have melted chocolate in about a minute! I used dark chocolate, but milk chocolate or white chocolate would also be great.

You can use mini marshmallows, but I actually like using large marshmallows and cutting them into quarters. I like the rustic shape, but also think the texture is a little softer. I used 10 marshmallows for this batch, all cut into quarters. You don’t really need to measure, just eyeball it.

Next, mix the chocolate, cookies & marshmallows together.

Then, use a spoon or an ice cream scoop to add mounds of the mixture to a baking sheet. I recommend lining the baking sheet with parchment paper. Pop the tray into the refrigerator and allow the clusters to cool and harden.

That’s all there is to it! You can make the cookie clusters as large or small as you want! I recommend storing in an airtight container or bag.

Ingredients

  • 6 stroopwafel cookies
  • 10 Large marshmallows
  • 10 Oz dark chocolate for melting

Instructions

  • Chop the stroopwafel cookies into bite sized pieces.
  • Melt chocolate in a microwave safe bowl for 30 second increments, stirring in between until completely melted.
  • Cut marshmallows into quarters. Stir all of the ingredients together until completely covered.
  • Use a large spoon or ice cream scoop to create mounds on a baking sheet. Refrigerate for 20 minutes or until the chocolate has hardened.
