Lemon Blueberry Pie Pound Cake Recipe

My favorite summer pound cake recipe with tart lemon & a sweet blueberry pie topping

Ingredients

Pound Cake

  • 1 ½ cups all-purpose flour
  • 1 TSP baking powder
  • 1/4 Tsp salt
  • 1 Cup white sugar
  • 2 eggs
  • 1/2 Cup butter softened
  • 2 Tbsp lemon juice
  • 1 Tbsp lemon zest
  • 1 Cup Greek yogurt

Topping

  • 1 Cup powdered sugar
  • 3 Tbsp milk
  • 1/2 Can blueberry pie filling

Instructions

  • Preheat oven to 350F & Line a 9x9 loaf pan with parchment paper
  • In a medium bowl, mix all dry ingredients
  • In a large bowl, mix the sugar and eggs
  • Add the softened butter and mix well- then stir in the lemon juice and lemon zest
  • Combine the wet & dry ingredients & then mix in the Greek yogurt
  • Pour the batter into the pan and add spoonfuls of blueberry pie filling. Bake for 30-40 minutes or until cooked through
  • Mix together powdered sugar and milk and pour over before slicing
