30 Minute Tuscan White Bean Vegetable Soup

An easy, hearty vegetarian white bean soup that comes together in under 30 minutes!
- 6 Cups vegetable broth
- 1 onion chopped
- 1 scallion chopped
- 1 carrot sliced
- 1 potato cubed
- 2 Cups spinach
- 2 Cans cannellini beans
- 1 bay leaf
- 3 Cloves garlic minced
- 3 Tbs olive oil
- 1 Tbs Italian seasoning
- salt & pepper
In a large pot, heat oil and cook onions, scallions, garlic & carrots for 2-3 minutes.
Add the potatoes, cannellini beans & seasoning. Break the bay leaf in half and add it to the pot.
Pour in the broth & bring it to a boil. Reduce the heat and simmer until the potatoes are tender.
Remove the bay leaf before stirring in the spinach.
Add salt & pepper to taste.
