ONE OF MY MOST ANTICIPATED RECIPES OF THE HOLIDAY SEason… pumpkin pie bread pudding!

just when you thought i couldn’t post any more pumpkin pie inspired recipes…it might just be the best thing i’ve baked this fall. plus, it’s actually pretty easy to make!

bread pudding reminds me a lot of french toast – but for dessert instead of breakfast!

instead of cooking it over the stove, it’s more of a casserole. but, you could definitely get away with making it for brunch during the holidays and i guarantee no one will complain!

i plan on making it for thanksgiving and christmas morning! it’s so tasty with a cup of hot coffee and a dollop of whipped cream or vanilla ice cream.

ingredients you’ll need

i linked all of the ingredients above to walmart just in case you want to use instacart for last minute delivery. i’ve found that they have the most reliable delivery of ingredients during the holidays. you can also use their pickup/delivery!

you’ll also need a baking dish. if you plan on delivering it or want easy clean up, you can also use a disposable dish.

how to make bread pudding

  • Preheat your oven to 350 F.
  • In a mixing bowl whisk together the sweetened condensed milk, canned pumpkin, eggs, sugar, butter and vanilla.
  • cut your bread into cubes and put them into an extra large mixing bowl. Pour the mixture evenly over the bread cubes then gently toss to coat. i like to Let it soak for about 15 minutes.
  • put the pumpkin mixture into a buttered or oiled baking dish.
  • Bake for about 45 minutes.
  • when it comes out of the oven, drizzle with caramel sauce.
  • Let it cool for a few minutes then cut and serving with whipped, cream or ice cream & an extra caramel drizzle. i think it’s best served warm!

tips for making the best bread pudding

  • I like to use day old bread for a better texture – this gives you a better consistency.
  • you can even prep it a day ahead and then let it rest in the fridge. pull it out and bake it the next day!
  • if you like your bread pudding extra gooey, add a splash of milk!
  • if you want single serving bread puddings, throw the mixture into a muffin tin!
