Meghan Markle’s Healthy Chia Seed Pudding Recipe

I’m mildly obsessed with the Suits actress and this just makes me love her even more. I feel like we’re best friends! Kidding.
Meghan said farewell to her blog, The Tig to focus on her royal duties. But I managed to track down a few of her favorite recipes the other night during some serious internet digging.
The Duchess is passionate about her health and eating healthy foods. Surprisingly, even though she’s royalty now, she still loves to cook! I can just imagine her now, whipping up homemade chia seed pudding for her & prince Harry’s breakfast.
Meghan Markle’s Chia Seed Pudding Recipe
I’m pretty sure every little girl dreamed of becoming a princess. And Meghan Markle totally fits the bill. A “normal” American who starts a whirlwind romance with a prince, moves to England and marries said Prince.
Now, you can eat like a royal instead of just daydreaming about being one! Meghan posted her Chia Seed Pudding recipe February of 2016 on her now deleted Instagram. Noted as an “afternoon snack”, chia seed pudding also makes an amazing breakfast or dessert!
Chia seeds are among the healthiest foods on the planet. Short of slamming green juice every morning, chia pudding is an amazing alternative. They’re loaded with nutrients that have major benefits for your body and brain. Chia seeds are tiny black seeds from the plant Salvia hispanica, which is related to the mint.
A one-ounce serving of chia seeds contains:
- Fiber: 11 grams.
- Protein: 4 grams.
- Fat: 9 grams (5 of which are omega-3s).
- Calcium: 18% of the recommended daily intake.
- Manganese: 30% of the recommended daily intake.
- Magnesium: 30% of the recommended daily intake.
- Phosphorus: 27% of the recommended daily intake.
- They also contain a decent amount of zinc, vitamin B3 (niacin), potassium, vitamin B1 (thiamine) and vitamin B2.
AND… they’re usually grown organically, they’re non-GMO and naturally gluten free.
Ingredients
- 2 cups of Unsweetened Almond Milk
- 1 cup of Chia seeds
- As Meghan notes, “add Cinnamon, Vanilla extract & a little extra Agave“
- Berries
- Coconut
How to Make Meghan’s Chia Seed Pudding
Alright, let’s make a snack fit for a royal wedding!
It’s pretty straight forward. Get a large mason jar or container you can store in the refrigerator.
Combine the Almond Milk, Chia seeds, Cinnamon, Vanilla & Agave in your container. Stir well. Just make sure there’s plenty of room for the pudding to expand. It usually doubles in size as the Chia seeds expand.
Store in your refrigerator overnight (for up to 2-3 days). When you’re ready to eat it, spoon it into a bowl and top with berries and coconut. I went with dried coconut, but you can use fresh coconut shavings if you have them.

- Vanilla Extract
- Agave
- Berries
- Shaved Coconut
Instructions
