Single Serving Healthy Protein Powder Cookie Dough + Erin Aschow + Ice Cream & Neon Dreams

Anyone else prefer cookie dough to baked cookies? I could literally eat an entire bowl of cookie dough to myself. Especially chocolate chip cookie dough!

When you’re trying to stay healthy, cookie dough isn’t normally a standard menu option. But every once in a while I have a major craving for a little sweet treat.

How to Make Protein Powder Cookie Dough

I’ve been whipping up a ton of healthified dinners like my take on Zuppa Toscana. I even whipped up a quick & easy dairy free and gluten free chicken alfredo!

But what about dessert!? Sometimes a girl just wants a little treat that doesn’t completely counteract all of the healthy foods she’s been eating! Enter: high protein powder cookie dough!

Healthy Protein Powder Cookie Dough

Protein Powder Cookie Dough is a great way to get that cookie dough flavor and taste without all of the added calories, fat & sugar!

I don’t know about you, but I love sneaking a little cookie dough from the mixing bowl. The great thing about this recipe is that now you can! And it’s perfectly safe to eat raw!

I like to make it as a single serving, but you can easily double or triple it if you want to feed more people.

How to Make Protein packed Cookie Dough

To make my healthy protein cookie dough, you’ll need to pick out a protein powder to start.

I like using vanilla pea protein powder. It’s a plant powered protein made from peas (instead of whey protein), making it easy to digest and also helps keep you full for longer. It also has a low glycemic index, meaning it won’t cause your blood sugar to spike. This helps reduce sugar cravings! I use this same protein powder in my protein shakes and protein balls.

You can substitute another protein powder, but I don’t recommend using whey-based protein powder because it will give you a runny, sticky textured dough. I also prefer sticking with plant based protein powders.

You’ll also need coconut flour, unsweetened almond milk, vanilla extract and mini chocolate chips. By using almond milk & vegan chocolate chips, the recipe is gluten free & vegan!

Instead of butter and eggs, the almond milk binds the dough dough together. You can use any nut milk, just keep an eye out to make sure it’s unsweetened so you’re not adding a bunch of sugar to it! This also makes it safe to eat raw.

I highly recommend using vanilla protein powder, that way don’t need to add any sugar or sweetener because it’s naturally sweetened.

You won’t need any special tools or kitchen utensils, just a bowl and spoon. It’s so easy to make you can whip it up in just a couple of minutes!

Healthy Protein Powder Cookie Dough

Ingredients

  • 3 tbsp vanilla protein powder
  • 1 tbsp coconut flour
  • ¼ cup unsweetened almond milk
  • ⅛ tsp vanilla extract
  • 1 tbs mini chocolate chips

Directions

  1. In a small bowl, mix the protein powder and coconut flour.
  2. Then, slowly mix in the almond milk and vanilla.
  3. Stir in the mini chocolate chips.
  4. Using the back of your spoon, gently press down on the mixture until it sticks together.

If your dough is too runny, add a little bit more protein powder. If it’s too crumbly, add a little more almond milk. Serve and enjoy!
