CHEESY SPINACH ARTICHOKE BAKED FETA PASTA

OK, SO I’M officially jumping on the viral tiktok train. remember when whipped coffee was all the rage? the latest and greatest trend is unexpectedly straightforward… baked feta pasta!
from what i understand, the viral recipe started with a 2019 video by a Finnish food blogger. basically, it involves plopping tomatoes seasoned with olive oil, salt and pepper into a baking dish with a full block of feta cheese in the middle. then cooking it until the feta melts. Next, you add garlic, basil & red pepper flakes. mix it with pasta and voila — you’ve baked TikTok’s hottest new food trend.

since i’m all about putting my own personal spin on things… i decided to change things up a bit and modify the famous recipe.
rather than add tomatoes, i opted to use artichoke hearts & spinach! fusing together with the baked feta to form a gooey, cheesy, spinach artichoke pasta bake!
it’s literally so easy to make….
you don’t need any fancy tools & it’s one of those “one pot” or “one pan” recipes you see all over pinterest.
If you want to make it a larger meal for date night or a party, add a protein like chicken to the side!
CHEESY SPINACH ARTICHOKE BAKED FETA PASTA
- 1 JAR QUARTERED ARTICHOKE HEARTS
- 2 CUPS SPINACH
- 1 BLOCK FETA
- 1 CUP CHOPPED ONIONS
- 1 BOX PASTA
- OLIVE OIL
- DRIED OREGANO
- RED PEPPER FLAKES
- SALT
- PEPPER

PREHEAT YOUR OVEN TO 400F.

IN A BAKING DISH, COMBINE YOUR ARTICHOKE HEARTS, SPINACH, ONION & A DASH OF OLIVE OIL.

PLACE THE BLOCK OF FETA IN THE CENTER OF THE BAKING DISH. DRIZZLE WITH OLIVE OIL. SEASON WITH DRIED OREGANO, SALT & PEPPER & RED PEPPER FLAKES.

BAKE FOR 30 MINUTES.

WHILE THE CHEESE IS BAKING, PREPARE & DRAIN YOUR FAVORITE PASTA.

STIR IN YOUR COOKED PASTA & ENJOY!
a few tips:
- gluten free? use your favorite gluten free noodles! i love banza!
- keto? use miracle noodles!
- Love the idea of Baked Feta Pasta but need more substance? Add protein like sausage, Chicken or fish!
- if you want to try the original recipe, swap out tomatoes and feta for spinach & artichokes! i also recommend adding fresh basil and a dash of white wine.
- don’t forget to preheat your oven to to 400 degrees fahrenheit! And i always recommend cooking noodles al dente.
