Let’s talk 3 ingredient lemon blueberry muffins…

Growing up, i used to always feel like it was such a treat when we would get muffins at the coffee shop. at the time, i had no idea that muffins are basically morning cupcakes. i thought it was like a healthy cupcake. when in reality, they’re the exact same thing.

fast forward to adult life – it’s rare that i opt for a morning muffin. not because i don’t love them, but because i feel a little guilty eating dessert for breakfast unless it’s a special occasion.

but i recently discovered a fun trick for making easy, lightened up muffins! i kid you not, 3 ingredients. and they’re actually some of the best muffins i’ve ever had! the trick? yogurt!

let’s get cookin! today we’re whipping up a batch of 3 ingredient lemon blueberry muffins!

how to make 3 INGREDIENT LEMON BLUEBERRY MUFFINS

you’re probably feeling a little skeptical right now. and i totally get it. how can you make a muffin that’s not terrible for you with only 3 ingredients?

my “less guilt” muffins use a miraculous combination of two ingredients:

yogurt + cake mix

TO MAKE MY BLUEBERRY MUFFINS, I OPTED TO USE LEMON CAKE MIX.

YOU LITERALLY COMBINE A BOX OF CAKE MIX & 2 CUPS OF YOUR FAVORITE YOGURT. I USED VANILLA YOGURT TO BALANCE THE FLAVOR.

THEN, STIR IN A CUP OF FROZEN BLUEBERRIES AND BAKE!

I’M NOT KIDDING… THAT’S ALL THERE IS TO IT. NO EGGS. NO BUTTER. NO EXTRA OIL.

YOU CAN USE THIS RECIPE COMBO FOR ANY TYPE OF MUFFINS YOU WANT! JUST COMBINE:

1 BOX OF CAKE MIX + 2 CUPS OF YOGURT

IF YOU’RE GLUTEN FREE, YOU CAN EVEN USE GLUTEN FREE CAKE MIX!

fresh or frozen blueberries work, but i like keeping frozen ones on hand for smoothies!

3 INGREDIENT LEMON BLUEBERRY MUFFINS

Instructions

  • Preheat your oven to 350 F.
  • Mix your cake mix & yogurt well (so there are no lumps).
  • Gently stir in the frozen blueberries.
  • Line a muffin tin with liners, or spray with non-stick cooking spray.
  • Pour the batter into the tin or liners.
  • Bake for 18-20 minutes.
