This year we had Thanksgiving dinner with Tony’s mom here in San Diego. The week before I had whipped up a pre-Thanksgiving feast for the blog (oh, blog life). The combination of two feasts left us with some AMAZING leftovers. Literally enough leftovers to last us like a month.

Thanksgiving is all about comfort and love. Being around friends and family, reminding ourselves what we’re grateful for, celebrating with a meal packed full of classic recipes and comfort foods. Which is why my new favorite leftover recipe is the perfect way to end Thanksgiving. Actually, it helps you enjoy a little bit of the Thanksgiving feeling for the weeks following too! What Is A Shepherd’s Pie?

Normally, shepherd’s pie (also known as cottage pie) is a meat pie with a crust or mashed potato topping. Sounds next level right? It’s kind of like a pot pie that’s been topped with mashed potatoes instead of pie crust.

There are tons of recipe variations, some having minced meat or ground beef. Others adding a layer of cheese to the top. My variation takes advantage of all of the Thanksgiving leftovers you’ve got, turning them into decadent, warm & cozy layers of flavor. You don’t even need to buy pie crust because you can turn your leftover stuffing into a tasty layer of crust!

How to Make Thanksgiving Leftovers Shepherd’s Pie

Here’s the great part, there’s no measuring needed for this recipe! You don’t even have to go buy anything! Just work with what you’ve already got! The only things I recommend adding (not required) are butter & stock (turkey, chicken or vegetable).

You’ll also want to use a pie dish. If you made pie (even with a store bought crust), just use the leftover pie tin!

Directions

1. Preheat your oven to 350 F. In a 9 to 10 inch pie dish, mound the stuffing on the bottom. I added a splash of vegetable broth and then pressed the stuffing to form a crust.

2. Layer with turkey, vegetables & any other leftovers. Then, drizzle with gravy. Spread the mashed potatoes over surface to the sides of dish. Top with a few slivers of butter if desired.

3. Place the pie on a baking sheet and bake until heated through and the potatoes are golden, 35 to 40 minutes. Let cool slightly before serving in slices!

You can also prepare the dish with all of your leftovers and free until you’re ready to eat it. Let it thaw in the refrigerator and bake!
