The One With the Dozen Lasagnas: mini lasagna bites recipe
To celebrate the Friends reunion, I thought it would fun to do a Friends inspired recipe! Whip up a batch of these tasty mini lasagna bites while you watch the cast of Friends get back together finally! And when you’re done, watch one of my favorite episodes that inspired this recipe, “The One with the Dozen Lasagnas”!
FINALLY FRIENDS IS BACK!
Who else is excited that the cast of Friends is finally doing a reunion special! If you missed it, I did a recipe dedicated to Rachel, Monica & Phoebe a while ago and it’s one of the most popular recipes here!
The Jennifer Aniston Salad is the tasty salad Jen & the ladies ate every single day on set for 10 years. Which makes me think, they probably ate it at the reunion taping too!
HOW TO MAKE MINI LASAGNA BITES
Here’s what you’ll need:
- Mini Muffin Tin
- Lasagna Noodles
- Pasta Sauce – I used Truff’s Black Truffle Pasta Sauce
- Cooking Spray
- Olive Oil – I used Truff’s Truffle infused Olive Oil
- Ricotta Cheese
- Fresh Mozzarella Pearls
- Salt & Pepper
- Dried Basil (or Oregano)
A FEW TIPS…
- Cook lasagna noodles first and let them cool off before starting your bites!
- Any tomato sauce works, use whatever you like. OR, upgrade your bites with alfredo or pesto sauce!
- This recipe is vegetarian friendly, but that doesn’t mean you can’t add a meat mixture like ground beef or italian sausage.
- If you’re dairy free, use dairy free cheese.
- If you’re gluten free, opt for gluten free lasagna noodles.
- I like using making mine “mini lasagna cups” because they’re bite sized. But you can also use a regular muffin tin & just cut the noodles in half for a larger portion.
- If you can’t find mozzarella pearls, use regular mozzarella cheese!

Equipment
- MINI MUFFIN TIN
Ingredients
- 6 LASAGNA NOODLES PRE COOKED & COOLED
- 1 CUP PASTA SAUCE
- 8 OZ RICOTTA CHEESE
- 12 FRESH MOZZARELLA PEARLS
- COOKING SPRAY
- OLIVE OIL
- SALT
- PEPPER
- DRIED BASIL
Instructions
- After your noodles have cooled off, cut them into quarters. I like using scissors for this!
- Spray your mini muffin tin with a little cooking spray. Then put a little dollop of pasta sauce in the bottom.
- Spoon a tablespoon of ricotta on the noodle and spread it out. Then roll it up and put it into the muffin tin.
- Put another little spoonful of pasta sauce on top. Then, cut your mozzarella pearls in half & put them on top of the lasagna bites.
- Drizzle a little olive oil on top & season with garlic powder, dried basil or oregano & pepper.
- Bake at 425 for about 20 minutes or until the cheese has melted and starts to bubble. I like mine crispy (like the edges of the lasagna) so I leave them in a little longer until they start to brown.
