How to Make Funfetti Birthday Cake Cookies

Ingredients

Directions

Combine the cake mix, softened butter, eggs & vanilla with a mixer. Refrigerate dough for at least one hour before using a cookie scoop to make rounded balls of dough (about 2”). 

Drop the cookie dough balls into your chocolate chips and press into the outside of the dough.

Refrigerate again for at least 30 minutes. 

Bake at 350 for 8-10 minutes.

Notes

The base for this recipe is Funfetti Cake Mix. If for any reason you can’t find it locally or online, just buy a boxed white cake mix & add a cup of sprinkles.

The same goes for the funfetti baking chips. If you can’t find them, you can easily substitute white chocolate chips! Don’t worry about adding too many chips. You want them to be around the entire ball of cookie dough – trust me!

Don’t skip the refrigeration, this is key for making the balls and making sure they stay soft and gooey!

I prefer them being slightly underbaked, so I pull them out at the 8 minute mark and let them cool off before serving.

  • 1 Box Funfetti Cake Mix
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp vanilla
  • 9 Oz funfetti baking chips

Instructions

  • Combine the cake mix, softened butter, eggs & vanilla with a mixer. Refrigerate dough for at least one hour before using a cookie scoop to make rounded balls of dough (about 2”). 
  • Drop the cookie dough balls into your chocolate chips and press into the outside of the dough.
    Refrigerate again for at least 30 minutes. 
  • Bake at 350 for 8-10 minutes. Allow to cool completely before serving!
