AFTER I WENT THROUGH THE ENTIRE SALAD IN A COUPLE OF DAYS (HINT, ITāS GREAT FOR MEAL PREPPING AND STAYS IN THE FRIDGE FOR A FEW DAYS WITHOUT GETTING SALALD)ā¦ I DECIDED TO TRY TO PUT MY OWN SPIN ON IT. AFTER Dissecting THE RECIPE, I OPTED TO SWAP OUT A FEW INGREDIENTS AND GIVE IT A THAI SPIN.

TIPS FOR MAKING THE THAI GODDESS SALAD
HEREāS MY MAIN ADVICE, IF YOU CANāT FIND A SPECIFIC INGREDIENT, IMPROVISE.
TECHNICALLY, YOU SHOULD USE THAI BASIL IN THIS RECIPE, BUT IF YOU CANāT FIND IT, DONāT STRESS. JUST USE WHATEVER BASIL YOUR GROCERY STORE HAS.
THE SAME GOES FOR THE OTHER INGREDIENTS – DONāT HAVE SHALLOTS? USE ONIONS. DONāT HAVE PEANUT OIL? USE CANOLA OIL. AT THE END OF THE DAY, IT WILL STILL TASTE GOOD.
IāM ALSO A FIRM BELIEVER IN āTASTING AS YOU GOā. IāM A GARLIC LOVER. SO I ADD EXTRA GARLIC. WANT A LITTLE EXTRA KICK? ADD SOME CHILI OIL OR PEPPERS.
WHAT I REALLY LOVE ABOUT THIS SALAD IS THAT IT HOLDS UP IN THE FRIDGE FOR 2-3 DAYS. MAKING IT GREAT FOR MEAL PREP. MOST SALADS GET SOGGY, BUT THE COMBINATION OF CABBAGE, BELL PEPPERS & CUCUMBER MAKE IT EXTRA STURDY.
THE THAI GODDESS SALAD
Ingredients
SALAD BASE
- 1 head of red cabbage finely diced
- 1 cucumber diced
- 1 Bunch green onions finely sliced
- 1/2 green bell pepper diced
- 1/4 Cup chives finely sliced
DRESSING
- 3 LIMES JUICED
- 1/4 CUP PEANUT OIL
- 2 TBS WHITE VINEGAR
- 4 CLOVES GARLIC
- 1 shallot
- 1 CUP THAI BASIL
- 1 CUP SPINACH
- 1/8 CUP SOY SAUCE
- 1/4 CUP PEANUTS
Instructions
- IN A LARGE BOWL, COMBINE ALL OF THE SALAD BASE INGREDIENTS.
- ADD EACH OF THE DRESSING INGREDIENTS INTO A BLENDER. BLEND UNTIL COMPLETELY COMBINED & SMOOTH.
- POUR THE DRESSING OVER THE SALAD BASE & MIX.
- FOR EXTRA SPICE, USE CHILI OIL OR SRIRACHA. TOP WITH FRESHLY CHOPPED PEANUTS FOR EXTRA CRUNCH.
