With temperature in the 90s, there’s nothing like lounging in the backyard in our pool (inflatable, duh), listening to some music and sipping on a nice, cold cocktail.

Recently, I’ve started getting really into making craft cocktails at home. When you go to a bar or restaurant, they can really add up! I had a mojito last week downtown that was literally $15. $15!!! For one drink! Sorry, but that’s just crazy talk. Instead of wasting a bunch of money on liquid calories, I’ve been working on my mixology and whipping up some fun drinks for our backyard pool parties! My latest favorite is the strawberry mojito cocktail.

What’s A Strawberry Mojito Cocktail?

Glad you asked! It’s a refreshing, slightly sweet, fruity alcoholic beverage. It’s a really fun play on the traditional mojito, adding freshly muddled strawberries for flavor and a pop of color. The mojito gets most of it’s flavor from fresh mint. Traditionally, a mojito is consists of five ingredients: white rum, sugar (usually sugar cane juice or simple syrup), lime juice, soda water and mint. The one thing I really love about my strawberry mojito recipe is that it cuts out the additional sugar. Instead of adding refined sugar, you get natural sweetness from the strawberries. Which makes it kind of healthy, right? Ok so maybe it’s not “healthy”, but definitely lower guilt.

Rather than making a single cocktail, I like to whip up a large batch for friends. It’s great because you can make it ahead of time and let it sit in the refrigerator. Even better? After you let it sit for a few hours the flavor intensifies!

How To Make A Strawberry Mojito Cocktail

Ingredients

  •  
  • Bacardi Rum
  • Mint
  • Limes
  • Strawberries
  • Soda water

Directions

  • If you’re making a single serving drink, muddle 2 strawberries and a couple of mint leaves together with the back of a spoon or muddler. If you’re making a full batch, muddle all of the strawberries & mint sprigs. I recommend setting 6 mint leaves and 6 strawberry slices aside for garnish.
  • Pour the mixture into a glass, or a large carafe. Then, squeeze the lime juice in. If making one drink, squeeze the juice of one lime into the glass. If making a batch, squeeze all of them. You can also set a few lime slices aside for garnish if you want.
  • Gently stir and add your rum and soda water. For a single serving, you’ll want to use 1 shot or 2 ounces of light rum. A full batch will make 6 drinks, so you’ll want to use 12 ounces or 6 shots. Depending on taste, I recommend adding about 1 cup of soda water per drink. When making a batch, you can add about 6 cups. Taste it and gauge whether or not you want more.
  • Garnish your drinks with mint sprigs, strawberry slices and lime wedges.
