I’m a huge fan of Starbucks breakfast foods. So when they recently came out with a new item, I rushed down the block to try them. Their Sous Vide Egg Bites are a non-bread breakfast option. Meaning, if you’re trying to go low carb or keto, they’re a great option. I’m obsessed with them, so it only seemed logical to try to hack the recipe so that I could make them at home!

What Are Sous Vide Egg Bites?

Sous Vide (pronounced sue-veed) is a cooking technique that uses temperature control to deliver consistent cooking results. Fancy restaurants use sous vide cooking to cook food to the exact level of “doneness”. Sous vide means “under vacuum” in French, meaning you vacuum-seal food in a bag, then cook it at a specific temperature in a water bath.

When it comes to cooking eggs, sous vide is a great technique for making your “ideal egg” every single time. When you cook eggs in a frying pan or try to bake them, it’s kind of a guessing game.

Starbucks sells two versions of sous vide eggs. They’re the perfect on the go food, because they’re basically little egg bites. The sous vide technique makes them a velvety texture that is packed with tons of flavor. My favorite flavor is their Bacon & Gruyere, which is packed with gruyere and monterey jack cheese and topped with applewood smoked bacon. They’re super convenient, super tasty & packed with protein!

How Do I “Sous Vide” My Eggs?

Ok, so here’s where things get interesting. I’m all about simplifying recipes. I don’t want to have to buy a fancy machine. If you want to splurge, you can buy a Sous Vide Precision Cooker. But that’s not necessary. I came up with an easy hack. And since I’m all about sharing my love of easy cooking tricks, I’m going to break it all down in a step by step tutorial. I swear, it’s SO easy and basically fool proof. Did I mention they taste EXACTLY the same as the Starbucks egg bites? Well they do… and are way cheaper!

Instead of using a sous vide cooker, all you really need are a muffin pan and a FoodSaver! I love my FoodSaver and use it daily. It’s great for storing food (meaning you save more money) and cooking! A regular muffin pan works best too, so skip the silicone kind. My hack involves freezing the egg mixture in the muffin pan and then vacuum sealing them. That way you can save them in the freezer and pop them out whenever you’re ready to eat! It’s a great way to meal prep for the month and save money on breakfast! Not to mention it’s a really easy way to cook yourself breakfast in the morning while you’re getting ready!

Supplies & Ingredients for Homemade Starbucks Egg Bites

Step One: Blend the Ingredients

Using a blender or hand held mixer, blend all of the ingredients together (except for the bacon). It will turn into a milky consistency that is foamy on top.

Step Two: Pour Your Eggs Into the Muffin Pan

I recommend spraying the muffin pan with some nonstick cooking spray. You can fill the egg mixture to the top. If you have remaining egg mixture, put it into the refrigerator and save it or use it in another muffin pan.

Step Three: Cook Your Bacon

In a large frying pan, cook your bacon. I like to leave mine a little undercooked (not too crispy) so that it doesn’t sink into the egg mixture. This is closer to the texture of the Starbucks egg bites as well. Once the bacon is done, put it onto a paper towel and pat the extra grease off.

Step Four: Add Your Bacon

I cut each piece of bacon in quarters. Then, added two pieces of bacon to each “muffin”. You can lay it on top and it should basically float. If you don’t eat bacon, just leave it off.

Step Five: Freeze Your Eggs

Put the muffin pan into the freezer. Make sure it’s a level surface so they don’t spill. I froze my eggs overnight, but you can wait about 2 hours and they’ll be ready. I recommend leaving the eggs out for a couple of minutes before you try to take them out of the pan. Then, use a knife to pop them out.

Step Six: Vacuum Seal Your Eggs

Follow the directions on your vacuum sealer. The one I have comes with a vacuum seal roll that you can cut to fit your food. If you’re using bags, just make sure there are at least 3″ on each side of the eggs once inserted.

I cut a piece about 6″ wide. After sealing the first side, I put 2 frozen eggs in the bag. Make sure the eggs are pushed to the outside edges (not touching) or the two eggs will stick together when cooking.

Using the “moist” mode (gross word, I know), seal the eggs into the bag. All vacuum sealers work differently, but the FoodSaver is really easy to use and has simple step by step directions included.

Step Seven: Cook, or “Sous Vide” Your Egg Bites

If you’re ready to eat, put a large pot of water on your stove and bring it to a boil. Put the remainder of your eggs in the freezer. Then, you can pull out a pack of eggs whenever you’re hungry.

Technically, you’re supposed to preheat your water to about 173 degrees. If you have a thermometer, you can check the temperature of your water. If not, just bring it to a boil and then once the water is boiling, turn it down slightly so it’s more of a simmer.

Then, put your vacuum sealed egg bites (don’t open them) into the water. Boil them for 25 minutes. Eat Your Starbucks Inspired Sous Vide Egg Bites at Home

To serve, take the egg pack out of the boiling water. Let it cool off for a few minutes, then cut the bag open using scissors. They’re ready to go, so you can throw them onto a plate, or just bring the bag with you if you’re on the go! It’s that easy!

It’s a really fun, tasty breakfast recipe that you can make ahead of time and save money by making in bulk! You can also get creative and add other ingredients like sausage, onions, chorizo, soyrizo, chopped vegetables or other cheeses!
