Single Serving Rice Krispies

Rice Krispies treats are kind of a tradition in my family. I feel like growing up, they’re kind of a staple. Probably because they’re super easy & cheap to make. And rarely do kids complain about them. Making a full batch isn’t necessarily hard or time consuming, but it leaves you a ton of dessert. This recipe is perfect for a quick treat or a way to use that last cup of cereal left in the box. 

Not only is this a single serving recipe, it only calls for 3 (5 if you want to make them fancy) ingredients, is made in the microwave & takes about 1 minute total. They’re so good. Literally, sooooo good. Way better than the store bought version.

You could make these on the stove, but if you have a microwave it’s a lot faster and easier. AND… there’s less of a mess to clean up. You only need a mug! Here’s an even BIGGER tip: If you’re in college, all you need is a cup of cereal and 1/2 tbs of butter. You can literally grab it in the cafeteria and make it in the microwave, or throw it into a cup and bring it back to your dorm room. It’s almost like I used to do that or something… crazy. 

Throw about 8 marshmallows or 1/2 cup of mini marshmallows into a microwave safe cup or bowl. Add 1/2 tablespoon of butter. Microwave for about 30 seconds. But watch it because all microwaves are different. Mix in your half cup of cereal. Even crazier… you can default of Rice Krispies, or go wild and try a new random cereal!

I pressed my mixture into a small tupperware container. For some reason it doesn’t stick to the inside of tupperware, so it makes getting it out a lot easier. But you can literally just leave it in the mug if you want. Or push it into a different cup. While it’s cooling, I recommend heating up a few chocolate chips. Literally, just a small handful. Microwave them for about 30 seconds to a minute. Spread the chocolate on top of the Rice Krispy and top with some sprinkles if you have them. Just an option to kick it up a notch.

I let mine set in the freezer for about 2 minutes, but you can eat it right away if you want. There are NO RULES!
