Red Velvet Donut Holes (Using Pancake Mix)

If you haven’t noticed… I love any excuse to celebrate a food holiday. It helps me justify eating my favorite things.
So my journey began when I realized (late this afternoon) that I needed to find a last minute pancake recipe. I was looking through my cupboard when I realized I actually have PANCAKE MIX. You know how I feel about mixes… they save lives. I got this super awesome Red Velvet Pancake in my Hatchery Box last week and had been looking for a way to rationalize making myself pancakes all week. I’m down to try just about anything that has Red Velvet involved.
So far… I’m a huge fan of all of the ingredients I’ve gotten from Hatchery and this Red Velvet Pancake Mix doesn’t disappoint. In reality, it makes an over the top pancake with just a few added ingredients.
BUT… I didn’t want an ordinary pancake today. I wanted a PANCAKE MIX DONUT! I’d heard rumors it was possible… but had to try it for myself. So, after a handful of trial and error batches (they were all still delicious), I concocted a quick recipe using only 4 Additional Ingredients.
I give you… RED VELVET DONUT HOLES (a la pancake mix)
Ingredients Needed:
– 1 1/3 cup Pancake Mix
– 1/3 Cup Milk (or less depending on the consistency of your pancake mix)
– 1 Egg
– Powdered Sugar (for dusting)
– Oil (I used Vegetable Oil)
Step One: Mix the Pancake Mix, Milk & Egg until well combined. If it’s a little runny, add a little extra Pancake Mix. You want it to be about the texture of a thick brownie batter.
Step Two: Heat about an inch of oil in a pan. I used a pretty ghetto sauce pan, if you want to be fancy you can use a fryer. Heat it up on high for a few minutes until it’s starting to bubble. No… I didn’t use a thermometer. Just eyeball it.
Steph Three: Using a tablespoon, drop spoonfuls of batter into the hot oil. Flip the ball over once it’s browned to cook both sides.
Step Four: Using a slotted spoon (or a pasta spoon, whatever you have handy) remove the donuts and let them cool/dry on a paper towel.
Step Five: Once they’re cool, put the donut holes into a paper bag (a lunch bag is optimal, but any paper bag will do). Sprinkle with powdered sugar and shake to coat.
Thats it! You’ve got donut holes! They may not be super glamorous but boy are they delicious. ENJOY!
