Soup Recipe Hack Using Instant Mashed Potatoes
I love soup – I don’t care what season it is. It doesn’t matter if its the middle of summer, sometimes I just want a hearty bowl of soup!
This recipe is so easy, packed with a ton of flavor and is only 4 ingredients! Here’s what you’ll need:
- Instant Mashed Potatoes
- Rotisserie Chicken
- Frozen Mixed Vegetables
- Chicken Broth
Instant mashed potatoes get a bad rap. There are so many uses for them, remember my upgraded instant mashed potato bake from the holidays?
The trick with this soup hack is the instant mashed potatoes! They both thicken the broth & give it a ton of flavor! They turn a basic chicken & vegetable soup into a hearty meal.
You can use any chicken – but I find store bought rotisserie chicken easiest & the most flavorful. I also use a frozen mixed vegetable bag that has peas, carrots, corn & green beans. You can use whatever you like though.
This recipe makes about 2 servings, so you can easily double or even triple it. Just use more chicken/vegetables and increase your cups of instant mashed potatoes! That’s literally all there is to it.
Because the mashed potatoes are flavored and buttery, you don’t really need any additional ingredients. I just add a little salt & pepper to taste! If you want to get really fancy, bake a crescent roll and serve it with a biscuit for a chicken pot pie inspired dish!
Quick & Easy Soup Recipe Hack Using Instant Mashed Potatoes
Ingredients
- 1 Cup instant mashed potatoes
- 1 Bag frozen mixed vegetables
- 1 Cup rotisserie chicken
- 24 Oz chicken broth
Instructions
- combine your frozen mixed vegetables, rotisserie chicken & chicken broth in a small pot. Bring it to a boil & simmer until the vegetables are cooked through.
- stir in the instant mashed potatoes & simmer for 2-3 minutes and allow the soup to thicken. Season with salt & pepper and serve!
