No Bake: Red Velvet S’mores Cake
It’s been a while since I’ve posted one of my trusty “Microwave Meals”. I’ve gotten a handful of comments telling me that I shouldn’t use a microwave, because it zaps food nutrition. Lucky for you, the recipe I’m bringing you has absolutely zero nutritional value. Does that mean it also zaps calories out too? Just saying…
I love a good mug recipe. Last week I posted the cutest DIY S’mores Hot Cocoa Jars, which also double as an awesome last minute gift. This week, I’m taking S’mores to the next level (because hello, who doesn’t like marshmallows) and making: Red Velvet S’mores in a Jar! A few notes… You can totally make these as a gift, just layering the ingredients in a jar and adding a little note card/bow with instructions. Technically, you could also bake them. I don’t really see the point, because I’m all about instant gratification. I want my damn cake in 3 minutes. You can also do this in a mug, I just thought the jar was cute. Lastly, you can make a few of these at once (combining all ingredients and portioning out) or one at a time!
Mason Jar Red Velvet Cake, S’mores Style
What you’ll need for the Crust:
– 6 Tablespoons of Graham Cracker Crumbs
– 1 Tablespoon of Melted Butter
What you’ll need for the Cake:
– 1 Cup of boxed Red Velvet Cake Mix (whatever brand you like)
– 1/4 Cup of Oil (I like to use Coconut Oil or Olive Oil, but you can use Canola Oil as well)
– 1 Egg, Beaten
– 1/2 to 3/4 Cup of Water (depending on consistency)
– Mini Marshmallows for the top
Directions:
1. In a small bowl, combine your butter & graham cracker crumbs.
2. If you’re using a mason jar, spray it with non stick cooking spray (so no cake gets left behind). If you’re using a mug, you might want to cut this recipe in half or divide it into two cups so that it doesn’t overflow.
3. In a separate small bowl, combine the cake mix, oil, egg & water. Start with 1/2 cup of water. If it’s too thick to stir, slowly add more by the tablespoon.
4. Press your graham cracker mixture into the bottom of the mason jar. Pour your cake batter on top.
5. Microwave for 3 minutes. Test with a toothpick or fork to see if it’s ready. If not, add another 30 seconds.
6. Top with Mini Marshmallows. I like to broil mine for about 3 minutes so that they’re golden brown, but you can also microwave for about 15 seconds!
