A few weeks ago on Instagram I announced a fun “Create Your Own Ice Cream Flavor Contest”! There were so many fun flavor ideas, from Tres Leches Cake to Hot Cheeto Burrito. Sadly, I don’t think I could make a burrito flavored ice cream and not have it ruin the flavor for me forever. The winning flavor idea: MERMAID ICE CREAM! Ok, so that’s not really a flavor. But I loved the idea! I wanted to make something pretty and totally IG worthy.

In true Revenge Bakery form, I went with my tried and true 2 ingredient ice cream recipe. I also made some super cute, mermaid inspired ice cream cones to serve it in. Total under the sea Ariel vibes, right?

To make the ice cream, here’s what you’ll need:

I use a Kitchen Aid Mixer for all of my baking, but you can use any hand mixer as well. I don’t recommend trying to whisk it by hand though. The first step is to whip the Heavy Whipping Cream until stiff peeks form. I pour the cream into the mixing bowl & mix on high for about 2-3 minutes. The slower your mixer, the longer it will take.

After it thickens (into whipped cream consistency), add in the Sweetened Condensed Milk. You don’t need to mix it for very long, just until it’s all combined.

Separate the ice cream mixture into 3 separate bowls (I used regular cereal bowls). Then, Put a few drops of food coloring in each and stir. If it’s not bright enough, add more food coloring! For the purple, you’ll do a few drops of blue & pink.

Once your colored mixtures are ready, you’ll want to pour them into an ice cream tub or tupperware. I recommend pouring a small amount at a time of each color in layers. You can add some sprinkles ass you go. Once you’ve filled the container, you can use a knife to gently mix it. Only a few stirs, just to get the marbled effect. Then top with some more sprinkles.

Freeze the ice cream for at least 4 – 6 hours before serving.

To make the bedazzled cones you’ll need:

These cones are literally the prettiest thing I’ve ever made — and SO EASY. In a microwave safe bowl, put about 2 cups of marshmallows and 1 tablespoon of water in the microwave for 30 seconds. Stir so that it combines and is almost a frosting texture. Then, dip the cone into the melted marshmallows. Sprinkle some sugar pearls & let it cool/harden for about 15 minutes. I placed them on a cookie rack so they wouldn’t smudge, but you could also just stick the cones in cups to stand up right. They’ll stay good for a couple of days, just make sure you wrap them in plastic wrap or put them in a ziplock bag.
