maroulosalata – MY FAVORITE SIMPLE SALAD

In Greek, maroulo means lettuce & salata means salad. So maroulosalata basically translates to lettuce salad! Don’t be fooled, just because it’s simple, doesn’t mean it isn’t flavorful! The ingredients are simple and it’s easy to make, making it one of my all time favorite salad recipes.

Just like my viral Jennifer Aniston Salad Recipe, the combination of herbs & onions are what really elevate the flavors of this dish. While my “Friends Salad” uses mint and parsley with red onions, this salad uses fresh dill and spring onions with fresh lemon juice for acidity.

I literally make it every week, it’s that good! If I’m making it for lunch or dinner, I’ll usually serve it with an added protein like chicken. But it’s also great on it’s own or with bread as a side dish.

It’s also easy to prep in advance if you want to make it for a party or have it ready for lunches during the week. Just keep the greens separate from the feta, extra virgin olive oil & lemon juice.

A fun little hack I have is buying single serving olive oil packets for making dressing on the go – they’re great for meal prepping and lunch boxes! You can also get single serving packets of lemon juice to make life even easier!

If you’re vegan, you can easily modify this recipe using vegan crumbled feta. VioLife makes one of my favorite non-dairy feta cheeses, the consistency & flavor are amazing.

The recipe below calls for 2 heads of romaine lettuce. Generally, I use one head of romaine per person. The measurements are fairly simple, so it’s easy to make for larger crowds. Or, just use one head of lettuce for a single serving.

The key to making this salad is by starting with thinly sliced lettuce. Most of the time I just eyeball the ingredients. You can make the salad dressing on the side, or just mix all of the ingredients in a bowl as you go.

If you’re looking to add other ingredients, I recommend Kalamata olives, pistachios, English cucumbers or tomatoes.
