I Love You A Waffle Lot: Mini Ice Cream Wafflewiches
So I just got home from vacation and have the post vacation blues. I’ll be posting a quick little vacay recap, but in the meantime… I thought I owed it to myself to whip up a pick me up. In the form of a tasty treat, duh.
Ice cream sandwiches were one of the best inventions ever. Hands down. I mean, you really can’t go wrong putting Ice Cream in between 2 cookies. BUT, what if you don’t have cookies? Or, what if you’re trying to get creative and come up with something to really knock your friend’s socks off? I give you… the WAFFLEWICH!
This recipe works with any frozen waffles. I have an affinity for all things “mini” because I feel like things are healthier for you when they’re small. Makes sense, right? It’s like you can eat more of them. So, I used Mini Eggo Waffles. It’s hot out and I didn’t want to waste my energy whipping up a batch of waffles from scratch.
So… all you need are a few ingredients:
– Frozen Waffles (get creative, pick your favorite)
-Ice Cream
-Chocolate
-Sprinkles/Toppings
So I made 2 different Mini Wafflewiches. I had some leftover Cake Batter Ice Cream (click for the super easy 3 ingredient recipe). And I had some of my all time fave Gold Medal Ribbon. I realize the humor behind that, but it’s legit been my favorite ice cream since I was a little kid. The fact that they sell it at the grocery store now is a dream come true.
Like I said, I used Mini Waffles. You can use big ones, chocolate ones, whatever. Just try to make sure it will taste good with your ice cream choice. Then, I grabbed some White Chocolate Chips & Dark Chocolate Chips, Rainbow Sprinkles & Toffee Bits.
Again, go with your gut. Dark Chocolate and Funfetti don’t really sound like my jam, so I went with White Chocolate and sprinkles. Gold Medal Ribbon with Dark Chocolate and Toffee Bits sounded tasty.
Toast your Waffles normally. Let them cool off for a few minutes. Then, using a small melon ball scooper or a small teaspoon, heap some ice cream on to a waffle and top it with another. Heat up your chocolate chips until they’re melted, dip the sandwich, dip in a topping and repeat. Make as many as you want! Then, freeze for about 10 minutes or until you’re ready to serve them!
