I’ve shared a ton of cake mix hacks over the years, but I recently came up my first angel cake mix hack! These lemon cake bars are the ultimate cross between a dense, rich lemon bar & light and fluffy cake.

How to Make Lemon Cake Bars with Angel Food Cake Mix

The best part about this recipe – aside from getting to eat it? It’s only 3 ingredients! Seriously! The magic happens when you combine angel food cake mix, a can of evaporated milk & a jar of lemon curd. That’s right, you don’t need to add any eggs, butter or oil.

This decadent dessert comes together in about 30 minutes & is great for summer bbq’s and weekend brunches! If you’re a fan of sweet and tart lemon desserts, you’re going to want to save this recipe.

If you’ve never had angel food cake, it’s a type of sponge cake that’s made with egg whites. It’s different from other cakes because it doesn’t use butter & has a light and fluffy texture from whipping the egg whites.

Evaporated milk is also referred to as unsweetened condensed milk. It’s not a powder, but a shelf stable liquid you’ll usually find in a can. A lot of the time you’ll see it as a substitute for half and half or used as a creamier option than regular milk.

And before you ask, lemon pie filling and lemon curd aren’t the same thing. Lemon curd is a thick, rich spread made with eggs, lemon juice, butter and sugar. I find that it works really well with the baking mix because it already has eggs, butter & sugar in it!

You can substitute lemon pie filling, but it’s going to change the texture of the bars. I recommend sticking with lemon curd.

Directions

Combine your ingredients and mix in a large bowl. I recommend using a spatula to hand mix the batter. You don’t want to over mix it – it will start to puff up as you stir. 

Pour the cake mix into a parchment paper lined 9×13 baking dish & bake at 350F for about 25-30 minutes or until it’s baked through. You can use a toothpick or a fork to check the center.

Allow the cake to cool completely before slicing into bars. For a clean slice, grab a towel and some warm water to wipe your knife in between cuts! I like to sprinkle with some powdered sugar before serving, but that step is totally optional!

BONUS TIP: This recipe is amazing using Orange and Blackberry Curds! You can substitute any flavor of jarred curd and make a tasty fruit flavored bar.

Ingredients

  • 16 OZ ANGEL FOOD CAKE MIX
  • 12 OZ EVAPORATE MILK
  • 12 OZ LEMON CURD

Instructions

  • IN A MEDIUM BOWL, MIX ALL OF YOUR INGREDIENTS WITH A SPOON OR A SPATULA.
  • POUR YOUR BATTER INTO A PARCHMENT PAPER LINED 9X13” RECTANGULAR BAKING DISH.
  • BAKE AT 350F FOR 25-30 MINUTES OR COOKED THROUGH.
  • ALLOW IT TO COOL COMPLETELY BEFORE SLICING INTO BARS & TOPPNG WITH POWDERED SUGAR FOR SERVING.
