Lazy Sundae Recipe… I love that ice cream like McAdams loves Gosling

Lately I’ve been feeling majorly lazy. I still have just as much to get done, but don’t have an ounce of energy at the end of the day. Mornings for me are rough. I wake up and go to the gym & usually hit my post workout wall right before I start working. I’ve said it before & I’ll say it again, I’m addicted to coffee. I don’t even care. It’s totally worth it. It make me feel like an eagle soaring high above my exhaustion.
I get really bored with my coffee routine, but have become a huge coffee creamer addict. It makes life a little more exciting when your coffee tastes like dessert. I recently stumbled upon International Delight’s new “clean label” coffee creamer & it only has 5 ingredients!
As I was sipping on my coffee a few days ago, it dawned on me… I should use this stuff to make ice cream! GENIUS (if i do say so). So, I adapted my 3 Ingredient Ice Cream Recipe & decided to make a Lazy Sundae Ice Cream! What’s great is that it only calls for 6 ingredients & you don’t need any fancy equipment!
I made this little recipe card that you can screen shot or save on your phone. That way, when you get to the grocery store, you’ve got a list of all the ingredients you need to buy! Complete with a picture of the creamer I recommend so you can spot it in the freezing cold section! If you can’t find it, any coffee creamer flavor will do. I’d recommend a Caramel one though. I tried the recipe the first time with a Chocolate Toffee one and it was good… but the Caramel is better!
Once you have all of your ingredients, here’s the plan…
- Whip your cream until it thickens up and you see peaks forming. Then, slowly add in your Coffee Creamer & Sweetened Condensed Milk.
- Pour half of your mixture into a freezer safe container. I just use tupperware, nothing fancy.
- Then, drizzle about 1/4 cup of Caramel Sauce & 1/4 cup of Chocolate Sauce.
- Chop up about 1/2 cup of brownies. I used leftovers from another recipe, but you can buy some at the store or make your own. Sprinkle the brownies on top.
- Gently pour the rest of your ice cream mixture on top.
- Pour another 1/4 cup of Caramel Sauce & Chocolate Sauce on top. Sprinkle with your remaining brownies.
- Freeze for 3+ hours or until firm.
- Enjoy! You can sprinkle it with nuts or sprinkles & serve with whipped cream if you’re feeling extra crazy!
