Lazy Girls Guide: Mini Monkey Bread Muffins

One of the major problems I encounter with buying ingredients is that I don’t know how to cook in small numbers. I’m notorious for making pasta and accidentally making about 10 servings. You buy the meat and noodles and sauce and it’s really hard to portion out the ingredients and figure out what to do with the remainder.

One reason I love buying biscuit dough is that you can easily make a few different meals and desserts from a single package. If you follow me on Snapchat, you know that when I made my Mini Deep Dish Pizzas, I only used half of the dough for pizza. The other half, I used to make dessert! Genius, right!? Dinner & Dessert with one tube of biscuit dough!

There are a million ways you can use the dough, but I decided to make a mini version of one of my all time favorite desserts: Monkey Bread. What’s Monkey Bread you may be asking yourself? It’s cinnamon, sugar & butter combined to make a carmel like sauce on top of little bits of pull apart dough. It’s one of those recipes that when you make a full batch, you look at your creation and feel intimidated, not sure what to do with it all. So… a great solution (if you’re not having a party), is to make MINI or personalized versions using a muffin tin. The other great part of this 2 part Biscuit Dough Installment is that both recipes are baked at 375 F for close to the same amount of time and require minimal ingredients and prep time.

Here’s what you’ll need:
Refrigerated Biscuit Dough (either use a full batch or half it and make mini pizzas with the other half)
– 1/4 cup Butter
– 1/4 cup Granulated White Sugar
– 2/3 cups Brown Sugar
– 1 1/2 teaspoons Cinnamon

Step One: Take one slice of biscuit dough and cut it into about 8-12 pieces, depending on how big you want your “pull a parts’.

Step Two: In a small bowl, combine the White Sugar and Cinnamon. Roll the dough around in the Sugar/Cinnamon mixture and place 8-12 of the pieces in a muffin tin (I recommend greasing the muffin tin)

Step Three: In a small microwave safe bowl, combine the Brown Sugar and Butter. Microwave for 30 second increments, stirring in between until it’s melted and a thicker “caramel” consistency. Pour a spoonful of the mixture over each muffin tin. Save a bit for later (you can pour it over each muffin before serving)

Step Four: Bake for 8 – 12 minutes at 375 F. Serve warm with a little extra sauce on top

That’s it! You’ve got a meal and dessert using one tin of biscuits! Or… you can just make a double batch of monkey bread and share with your favorite people!
