Lazy Girl’s Guide: Cake Batter Snack Mix Recipe

onesnackOne of my favorite things is cake batter… it’s a tough road between the mixing bowl and the oven in my house. I don’t care if it’s sketchy to eat raw eggs… I’ll take the risk!

That being said… any time I see a recipe with a “Cake Batter” flavored tag line, I’m skeptical. Does it really taste authentic, DOES IT!? More often than not, it doesn’t live up to my expectations. However… I recently stumbled upon a “Cupcake Puppy Chow” recipe on Sally’s Baking Addiction.

The term “Puppy Chow” kind of makes me uncomfortable, so as I was simplifying the recipe a bit, I thought I should rename it “Snack Mix”. It’s just more approachable!

RECIPE

– 4.5 cups Rice Chex cereal (gluten-free woohoo!)

– 1/4 cup salted butter

– 3 Tablespoons heavy cream

– 10 oz white white chocolate chips

– 2/3 cup rainbow sprinkles

– 1 and 1/2 cups powdered sugar

Step One: Put the Chex Cereal in a large bowl and set aside. In a saucepan (or microwave safe bowl), combine butter, cream & chocolate chips.

Step Two: If you’re using a microwave, blast for 30 seconds at a time and stir in between. If you’re using a stove, heat the mixture over medium heat until melted.

Step Three: Pour the mixture over the Chex and stir carefully (you don’t want to break the cereal. Let it sit for 2-3 minutes.

Step Four: You don’t want to add the sprinkles until the chocolate has cooled a bit or you’ll get a big runny colored mess. Slowly mix the sprinkles in (but don’t over mix).

Step Five: Pour the chocolate coated cereal into a large zip lock bag. Sprinkle the powdered sugar on top. Seal the bag and SHAKE!

I recommend eating within 2-3 days or it looses the crunch factor.
