Lazy Girls Guide: Ice Cube Tray Hack / Single Serving Cookies

Do you ever think to yourself, “I really wish I could bake cookies, but I don’t really want to bake a whole batch and am feeling kind of lazy.” Yea? Welcome to my world.

I was cleaning the other day aka cleaning for 5 minutes and then taking breaks to watch One Tree Hill reruns, when I was faced with a dilemma. I have an insane amount of leftover Easter candy. What to do with all those little Rolo’s, Pastel M&M’s and egg shaped chocolates? Bake them into cookies, duh. The problem I was facing, if I bake them all they’re going to go to waste. My boyfriend wasn’t home yet and they’d literally just sit on the counter staring at me.

So after some internet digging, I came up with the perfect solution. What’s the easiest way to make single serving cookies and save a bunch for quick access? AN ICE CUBE TRAY! It was like a spiritual awakening… not only can I save a bunch of cookie dough and pop one out whenever I want, it makes each cookie the same exact size! So when you do bake more than one, they’re all identical!!

You can do this with any cookie dough. It doesn’t have to be candy filled. Just pick your poison, make a little ball & jam it into the ice cube tray. If you want to make a little Rolo Surprise like I did, fill a dollop of Sugar Cookie Dough with one Rolo & smoosh it into the mold.

I recommend wrapping your tray with saran wrap or putting it in a large Ziplock bag to keep it from getting frosty or picking up other freezer flavors. Whenever you want to bake a cookie (or 5), just pop one out of the tray like you would an ice cube & bake away! I baked mine at 350F for 12 minutes, but it will vary depending on your recipe.
