Homemade Apple Spice Whoopie Pies Recipe
This nostalgic dessert is my take on the classic sandwich cookie and everyone’s favorite pie. Apple Spice Whoopie Pies combine soft, moist apple spice cookie cakes sandwiched with a sweet, creamy, fluffy filling.
Apple Spice Whoopie Pies Recipe
Ingredients
COOKIES
- 2 cups all-purpose flour
- 1 tsp cinnamon
- 1/4 tsp allspice
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 cup light brown sugar
- 1/4 cup unsalted butter (softened)
- 1/4 cup vegetable oil
- 1 cup chunky applesauce
- 1 egg
- 1 tsp vanilla
FILLING
- 1/2 unsalted butter (softened)
- 2 cups marshmallow fluff
- 1 cup powdered sugar
- 1 tsp vanilla
- Pinch of salt
Directions
- Preheat your oven to 350F.
- Whisk flour, cinnamon, nutmeg, allspice, baking powder, baking soda & salt in medium bowl.
- Use a stand mixer with a paddle attachment to cream brown sugar and butter for 2 minutesAdd oil, applesauce, egg and vanilla until smooth.
- Slowly add dry ingredients until combined.
- Use a cookie scoop to make even sized balls of batter 2 inches apart on a parchment paper lined baking sheet. Bake for 10 to 12 minutes.
- Remove from oven and cool completely.
- Place all of the filling ingredients in a large bowl or your stand mixer and beat until fluffy.
- Spread filling on the flat side of half the cookies. Sandwich with remaining cookies and store in the fridge – serve at room temperature.
