Healthy Girls Guide: Pesto Zucchini “Pasta”
One of my favorite things is going to the farmer’s market. I don’t know why, but it makes me feel like a grown up. You know, browsing fancy local vegetables and flowers. Having to carry cash to buy things. Spending an obscene amount of money on olive oil and eggs. You know, because nothing says “I’m an adult” like spending money on organic avocados.
One of my favorite tricks for the Farmer’s Market is to go at the very end… that way you can barter on flower prices!

I bought a ton of Zucchini to make Zucchini Pasta aka Healthy Make Believe Pasta!
To make the “pasta” you’ll need a device to cut the Zucchini. A lot of people are into Spiralizers but I didn’t want a massive contraption with a ton of attachments, so I got a Vegetti and it’s super easy to use!
Here’s what you’ll need for your “Make Believe Pesto Zucchini Pasta”:
– 1 Zucchini
– A couple of Cherry Tomatoes quartered
– Pesto Sauce (store bought or homemade)
– Garlic Paste (or chopped garlic)
– Parmesan Cheese
– Salt & Pepper
*This is a single serving recipe, so just multiply the ingredients by the number of people you want to feed. Generally, one zucchini makes enough noodles for one person.
After you turn your Zucchini into ‘noodles’, put the tomatoes, garlic & pesto in a non stick saucepan. Heat up until warm and then mix in the zucchini. The trick is not to cook the zucchini, but to just combine the ingredients and warm it up. If you leave it in the pan too long, they’ll get soggy and watery. They’ll also lose a lot of the nutritional value.
That’s it! It literally takes less than 10 minutes to make and is a super healthy alternative to pasta!
