One of the first things I shared on the blog with you guys was how to make ice cream with 2 ingredients. I kid you not. No fancy shmancy tools, gadgets or ice cream makers required. And you don’t need to buy any crazy ingredients.

By combining sweetened condensed milk + heavy whipping cream, you get a quick and easy ice cream base. You can serve it as is and it will taste kind of like Cold Stone’s Sweet Cream flavor.

OR, you can kick it up a notch and make your own over the top ice cream flavor. Which brings me to my next point… S’MORES ICE CREAM. It’s a thing you guys. And it’s soooo much better than any store bought ice cream. Why? Because you control all of the ingredients, which means you can add as many marshmallows as you want! I hate when I get a batch of rocky road with like 2 miniature marshmallows in it. That’s why, when I make my own ice cream, I’m pretty heavy handed with the mix ins!

The great thing about making S’mores Ice Cream is that it doesn’t matter what time of year it is. Whether it’s in the middle of summer or a cold, rainy day. It will always hit the spot and you don’t need a fire to make it!

I’ve made a ton of S’mores inspired recipes. Remember the Mint S’more Oreo Donuts I made? There’s something about the combination of marshmallows, chocolate and graham crackers that creates the perfect flavor trifecta. One of my other favorite treats is Dairy Queen’s S’mores Blizzard. Sadly, it’s not a permanent menu item. I also felt like I could improve on their almost perfect creation by adding more chocolate & marshmallows. So I decided to put my handy 2 ingredient ice cream recipe to good use and turned it into an over the top S’more creation!

This recipe is packed full of graham cracker cereal, chocolate chunks and mini marshmallows. For the base, I also added hot chocolate mix to give it a hint of chocolate without being over powering. The best part is that you only need a hand mixer and a freezer to make it! No ice cream machine or heavy laboring required. After it’s mixed up, it just takes a couple of hours to freeze & you’re in business. I also rounded all of the ingredients up on Amazon, so you can scroll down and shop below! This recipe will make about a pint of ice cream. You’ll need some sort of freezer safe bowl with a lid that seals. I have this set of pyrex dishes that work perfectly. Or you can buy these reusable ice cream storage containers that. Just make sure you’re using something with a lid to keep it from making a mess in the freezer.

If you want to make less, you can just cut the recipe in half. For instance, the recipe calls for one (14-ounce) can of sweetened condensed milk. If you want to make a half batch, measure 7 ounces or eyeball about half of the container.

What You’ll Need In Your Kitchen

The only thing you really need to make this ice cream recipe is a mixer. I use a KitchenAid Stand Mixer, but you can also use a hand mixer. I love my KitchenAid and use it almost every day. They are a little pricey though, so if you’re on a budget just invest in a cheap hand mixer. No need to get anything fancy. Since you have to whip the cream into stiff peaks, it’s pretty hard to do by hand and a lot easier with a mixer of some sort.

    1. Whip the heavy cream for at least 3 or 4 minutes – turn it off once the cream starts forming little dense mountains.
    1. Pour in the sweetened condensed milk  and hot chocolate mix. Mix until it’s just combined. You don’t want to over mix the cream or it will turn back into a liquid.
    1. Stir in your marshmallow creme, mini marshmallows, golden grahams & chocolate chips. If you want to add more, go for it!
    2. If you want to take your ice cream to the next level, roast a few marshmallows or mini marshmallows for a toasty garnish!
  1. Freeze for at least two hours before serving. Store in an airtight container in the freezer.
