3 Ingredient Low Fat Funfetti Coffee Creamer Recipe
Let’s get straight to the point, there’s really nothing that beats Funfetti in my book.
A few weeks ago, I had a custom cake created for my boyfriend’s birthday. Initially I thought I’d take on the task, but as our guest list grew, I got lazy. I decided to go to the only logical bakery I could think of: Coldstone. Duh. I mean, who can say no to ice cream cake? Literally, no one said no. I went with Cake Batter Ice Cream & Sprinkles, Yellow Cake, White Frosting & EXTRA Sprinkles on top. Basically creating a Funfetti Ice Cream Cake. It was next level. I’m so glad I didn’t bake because I wouldn’t have been able to devour pounds of it.
The other day I was eating leftovers with my coffee (yea I got the largest cake possible for that reason), I thought to myself… “What if this cake and coffee got busy and had a Funfetti Coffee baby?”.
I started searching the internet and stumbled upon a few recipes. None were quite right. As I’ve mentioned before, I actually try to steer clear of dairy. That delicious ice cream cake I just mentioned and my stomach were not getting along, but still totally worth it. I wanted to try to find something Almond Milk based that was lower guilt.
After a little bit of trial and error, I came up with a concoction that only required 3 ingredients. It’s low fat! I love cake batter, so incorporating it into my breakfast (and mid afternoon pick me up) is is basically a game changer.
What’s great about this recipe is that you can modify it to meet your tastes. I used Unsweetened Vanilla Almond Milk & Low Fat Sweetened Condensed Milk. You can use Regular Milk, Nonfat, Soy, Coconut, etc. Whatever floats your boat. You can also use standard Sweetened Condensed Milk. I just went with the Low Fat version because, I like to have my cake & eat it to. Aka I feel like I can justify having a taste of cake any time! You can use this creamer in both hot & cold coffee. If you’re not a coffee drinker, it’s awesome mixed in milk shakes.
To add the funfetti “sprinkles element”, use a little bit of honey around the rim of your glass and dunk it in some sprinkles! You can also top with whipped cream and an extra dash of sprinkles!
