Epic Loaded Bacon Biscuit Breakfast Sandwiches
I’d like to take you on a journey with me. Let’s call it a culinary journey.
A few years ago I stumbled upon a YouTube channel that changed my life and my stomach forever. A channel dedicated to eating food. And when I say food, I don’t mean your average sandwich or candy bar. I mean, the most EPIC foods of all time. That’s why they call it “Epic Meal Time”! Now you’re probably thinking, where the F is this post going, but stay with me. I watched one of their YouTube videos for something called Fast Food Lasagna and not only did it make me really hungry, it made me realize that if you can dream it, you can do it. And so I did it… I continued my quest towards covering the entire world in pepperoni and glitter.
Since then (I’m thinking that was like 6 years ago-ish), Epic Meal Time and I have both evolved. I have a blog and EMT has their very own brand of food. SUPER SNACK TIME! I’m not even kidding, it makes me emotional typing that they wanted to work with me on recipes. Like, what planet am I living on?? A few weeks ago I tried their Pizza Jerky and made some EPIC Loaded Pizza Fries. This week, I got a very special package in the mail with Bacon in a Bottle & Biscuits in a Box! And if you know me, you know what’s coming next… RECIPE ALERT!
I whipped up some Epic Loaded Bacon Biscuit Breakfast Sandwiches, or ELBBBS’s for short (Princess Bride reference). Let’s break it down: we’ve got Cheesy Biscuits in a Box sandwiching together some crispy bacon, gooey fried eggs & flavor packed bacon gravy. Where does the Bacon in a Bottle come into play you say? Well, I whipped up some of my famous breakfast gravy (drooling) and added some of SST’s Cheesy Bacon in a Bottle!
Alright, let’s stop wasting time and get cookin’… and sorry vegan friends, I have no idea how to make any of this without meat or dairy.
Epic Loaded Bacon Biscuit Breakfast Sandwiches
Ingredients
- 1 box of Epic Meal Time’s Biscuits in a Box
- 1 bottle of “Bacon in a Bottle”
- 8 slices of Bacon
- 8 Eggs
- 1 pound of breakfast sausage
- 1/3 cup all-purpose flour
- 3 to 4 cups whole milk
- 1/2 teaspoon seasoned salt
- 2 teaspoons of black pepper
Directions
- First things first, you need to make your biscuits. The folks over at Super Snack Time made it easy on us and all y0u have to do to make their biscuits is add water. It’s pretty fool proof, which is great when you’re hungry and lazy. Follow the directions on the back of the box. It’s as simple as that. Then, plop about 8 – 10 dough balls of biscuits onto a greased baking sheet. Again, follow the directions on the back of the box and cook them for about 10 minutes at 425 F, or until they’re golden brown.
- While your biscuits are cooking, make your bacon. There are a few options here. You can get that ready to go microwave stuff. Or, you can make it from “from scratch”. Meaning you have to actually cook it. I prefer to bake my bacon, which means you’ll want to do it BEFORE the biscuits go in. But you can also whip out a frying pan and throw your strips in there and cook them up. Pro tip: if you’re cooking them in a pan, always start with a cold pan. Then, turn on the heat and cook them, low and slow.
- To make the gravy, I use a really simple recipe. You start by adding small pieces of the sausage into a large skillet (it comes in a roll, kind of like pre-made cookie dough). Then, cook it according the directions on the package. Once it’s brown, reduce the heat to medium-low and sprinkle about half of the flour in and stir it in so the sausage starts soaking it up. Add the rest of the flour, little by little. Then, pour in the milk, stirring consistently. Cook the gravy & stir it consistently until it thickens (takes about 10 minutes). If it’s dry and lumpy, add more milk. Add a little salt and pepper. Then, let it warm up over low heat, stirring occasionally.
- To make the gravy, EPIC… stir in a teaspoon or two of Super Snack Time’s Bacon in a bottle! Just whisk it in and watch your gravy turn into a bacon blasted masterpiece.
- Cook your eggs. I like my eggs over easy. But if you prefer sunny side up, fried or even scramble, you do you boo. You’ll want to either cook them individually or in batches. The recipe makes 8 sandwiches, so if you’re only making one or two, only make one or two eggs and save the rest.
- Assemble your sammies. This is where the magic really starts happening. Cut your biscuits in half and load your ingredients. Like I said, this recipe makes 8 sandwiches. If you’re only eating one, leave the other ingredients unassembled and save for later so they don’t make the biscuits soggy. I layered the bacon, then the egg & then added a drizzle of gravy.
