The Easiest Appetizer Ever: Mini Chicken & Waffle Sliders
Is there really anything better than an appetizer? I was browsing through Southern Living’s collection of “Festive Mini Appetizers” at about 2 AM one night (or morning I should say), drooling over all of the bite sized creations recently. I get a major snack attack late at night. So it’s pretty dangerous for me to start scrolling through food photos. I instantly pinned the most mouth watering recipe for Buttermilk Chicken and Waffles.
Fast forward to the next morning when I decided to make them… I felt a little lazy. Ok, a lot lazy. As amazing as the recipe sounded, I didn’t have the energy to make them. But I still had the craving. So, in typical “Revenge Bakery” fashion, I opted to find an easy alternative. AKA… how can I make these in under 30 minutes with what I’ve already got in the freezer.
The Easiest Appetizer Ever: Mini Chicken & Waffle Sliders
Cue: me opening the freezer. I have a lot of random stuff in there. I zeroed in on the two key components that could make my dream come true: Mini Eggo Waffles and Popcorn Chicken. That’s right… you can wow your friends and make them think you spent hours slaving away in the kitchen on these adorable little bites. When in reality it takes under 30 minutes!
What You Need
- Mini Frozen Waffles
- Frozen Popcorn Chicken or Chicken Nuggets
- Syrup (I like this maple syrup)
- Sriracha Sauce
- Mini Forks or toothpicks (I bought these ones)
Directions
Prepare the frozen chicken according to the package directions. To make them extra crispy (more like fried chicken, minus the fryer), I line a baking sheet with tinfoil. Then I spray the sheet with cooking spray. After placing my chicken onto the sheet, I spray them with cooking spray as well. I also like to cook my chicken for slightly longer than the package directions. Cooking for 2-3 extra minutes makes them extra crispy.
Towards the end of the chicken baking, start toasting your mini waffles in a toaster. Line another baking sheet or serving platter with your toasted mini waffles (separated). I like to use scissors to separate my waffles so they end up perfectly circular.
Top each mini waffle with one piece of chicken. Then, use either mini forks or toothpicks to hold them together.
To finish, I made my own “secret sauce”. Just to step up the flavor and add a little color. In a small microwave safe bowl or mug, heat up about 1/2 cup of maple syrup for about 30 seconds. Then, add a few squirts of Sriracha, depending on how spicy you want it. Pour the sauce into a small ziplock bag. Snip a little piece of the end off so you can drizzle the sauce onto each bite.
Voila! I recommend making these “to order” or making them right before you eat them. They’re definitely better warm.
