I remember seeing a Jamie Oliver Christmas special where he served chorizo dates about 15 years ago & have been making these sweet and spicy skewers ever since! The combination of cheese & chorizo gives these stuffed dates so much flavor and make them the perfect, decadent appetizer for your next party!
How to Make Cheese & Chorizo Stuffed Date Skewers
I canβt remember what special I saw these made on or the exact recipe he shared, but Iβve been adapting it ever since. I canβt take all of the credit for the flavor combination! But these stuffed date skewers are literally so easy to make and everyone will be asking you for a copy of the recipe.
But youβre in luck, because I finally wrote down a version of the recipe for you guys so you can save and share it!

How to Make the Skewers
- Preheat your oven to 350F.
- βSplitβ a date open with your fingers and remove the pit. Donβt worry about breaking it, it will stick back together.
- Then, Place an almond in the center. Cut a piece of small piece of cheese off and place it on top of the almond. Squeeze the date back together.
- Next, Fold a piece of chorizo in half & then quartered. Use a skewer or toothpick and slide the folded chorizo towards one end. Then, poke the skewer through the stuffed date. Add another folded slice of chorizo on the other end.
- You can make the stuffed date skewers ahead of time and store them in the refrigerator. When youβre read to serve them, place them in a baking dish with a few tablespoons of butter. Drizzle with a little balsamic vinegar.
- Bake for about 10 minutes or until the cheese has melted. Allow the dates to cool for a few minutes before serving!
The best part about this recipe is that there is no need to measure anything! Literally just eyeball it.
The number of servings per container of dates may vary. I made 8 skewers because the chorizo had 16 slices. So you can gauge the number of skewers on the number of dates in your container and buy more if needed.
For 8 skewers, I used 2 tablespoons of butter & about β cup of vinegar.
Prep time is about 10 minutes & you cook time is 10 minutes, so overall they take about 20 minutes to make!

Cheese & Chorizo Stuffed Date Skewers
Ingredients
- 1/2 LB MITICA DRUNKEN GOAT CHEESE
- 2 OZ FERMIN IBERICO CHORIZOβ
- 1 CONTAINER JUMBO MEDJOOL DATESβ
- 1 CONTAINER MARCONA ALMONDSβ
- 1/8 CUP BALSAMIC VINEGAR OF MODENAβ
- 2 TBSP. UNSALTED BUTTERβ
Instructions
- Preheat the oven to 350 F.
- Split the dates open with your fingers, and remove the pit. Place an almond in the center of each. Cut the Drunken Goat into small pieces, and place a piece on top of each almond. Squeeze the dates back together. Fold the slices of chorizo in half and then in half again.
- To each skewer, add a piece of folded chorizo and a stuffed date, followed by another piece of chorizo. You should end up with about eight to ten skewers, based on the number of dates in your container.
- If making in advance, place in the refrigerator until you’re ready to bake. Add the skewers to a baking dish with the butter, then drizzle with balsamic vinegar.
- Bake for about 10 minutes or until the cheese has melted. Allow the dates to cool for a few minutes before serving.
