How to Make Marshmallow Caramel S’mores Cookies
My recipe for the most decadent toasted marshmallow creme caramel s’mores cookies!
Doubletree recently shared the official recipe for their chocolate chip cookies. Now, at-home bakers like myself can create amazing treats at home!
I don’t know about you guys, but I 100% ask for 4-5 cookies a day when I’m staying at a Doubletree. No shame in my dessert game.
So I was PUMPED when I saw the recipe go up. Needless to say, I baked a batch and they’re amazing. Literally, taste exactly like the cookies the hotel serves out of their warming drawers.
A few days later, I baked another batch. And here’s where things started getting interesting… I thought to myself, how can I take these cookies to a whole new, sugar packed level?
Inspired by my recent oatmeal cream pies, I decided to upgrade my chocolate chip cookies & turn them into caramel s’mores cookies! Using chocolate chip cookies instead of the standard graham crackers is 110% worth the effort.

Marshmallow Caramel S’mores Cookies
First things first, you have to make Doubletree’s Famous Chocolate Chip Cookies. Yes, you can technically make any chocolate chip cookies. But where’s the fun in that?
After you make the cookies, let them cool off. You don’t want them falling apart while you’re assembling the sandwiches.
From there, making caramel s’mores cookies is really easy. You’ll need marshmallows & chocolate caramel squares. Mini marshmallows work too!
Next, I blasted my marshmallows with my baking torch. This gives them the golden brown, toasty flavor.
You can also throw them into the oven (don’t forget to preheat the oven). Or use the broiler for a few minutes to melt the marshmallows.
No special skill is required for assembling the cookies. Just add a marshmallow or two, melt/brown the marshmallow & add a chocolate caramel square. Then, sandwich another cookie on top. Voila!
Literally… the easiest, most over the top, delish dessert. They actually look way fancier than they are. If you’re feeling lazy, just use store bought dough or store bought cookies. It will still taste good, I promise.
Also, if you’re in the mood for some creative baking, you can also add a layer of peanut butter. Or, try sprinkling a little salt on them for salted caramel.

CARAMEL S’MORES COOKIES
Ingredients
- 1/2 lb butter
- 3/4 cup granulated sugar plus an additional 1 tablespoon
- 3/4 cup light brown sugar
- 2 eggs
- 1 1/4 tsp vanilla extract
- 1/4 tsp freshly squeezed lemon juice
- 2 1/4 cups flour
- 1/2 cup rolled oats
- 1 tsp baking soda
- 1 tsp salt
- 1 pinch cinnamon
- 2 2/3 cups Nestle Tollhouse semi-sweet chocolate chips
- 1 3/4 cups chopped walnuts
Instructions
- Cream butter, sugar and brown sugar in the bowl of a stand mixer on medium speed for about 2 minutes.
- Add eggs, vanilla and lemon juice, blending with mixer on low speed for 30 seconds, then medium speed for about 2 minutes, or until light and fluffy, scraping down bowl.
- With mixer on low speed, add flour, oats, baking soda, salt and cinnamon, blending for about 45 seconds. Don’t overmix.
- Remove bowl from mixer and stir in chocolate chips and walnuts.
- Portion dough with a scoop (about 3 tablespoons) onto a baking sheet lined with parchment paper about 2 inches apart.
- Preheat oven to 300°F. Bake for 20 to 23 minutes, or until edges are golden brown and center is still soft.
- Remove from oven and cool on baking sheet for about 1 hour.
