Caramel Apple Slab Pie Recipe

You might be surprised to learn this… but I’m not a huge pie baker. Last year I shared my recipes for miniature pecan pies & a bourbon brown sugar pumpkin pie with you guys. This year, I wanted to share one of my favorite hacks for making a “lazy pie”. My homemade caramel apple slab pie is a major crowd pleaser and one of the easiest desserts you can make!

Everyone loves a good apple pie. There’s something about it that makes me feel warm and cozy and the holidays aren’t complete without a slice. Sometimes they can be kind of… boring though. That’s why I spice my apple pie up with a a little caramel! The combination of caramel and apple is pretty classic. You can buy caramel apples during fall and winter months, but they can be kind of a pain to cut up and eat!

Easy Thanksgiving Pie Recipe

Using caramel and apples in pie form is the perfect blend of spices and buttery sweetness. The best part about my recipe is that you only need 3 ingredients! That’s right, we’re skipping the homemade pie crust & buying it ready made. That’s not to say you can’t make your own from scratch, but if you’re in a time crunch or not in the mood for a great bake off, I guarantee no one will be the wiser if you opt for a store bought crust!

What is a Slab Pie?

Slab pie is a fancy way of saying “bake a pie in a sheet pan”. That means you don’t need to own a pie dish, you can literally just use any baking sheet or jelly roll pan you’ve got in your cupboard.

Technically this is less of a pie recipe and more of a pie hack! Slab pie is an easy, genius pie that serves a crowd with less fuss and less mess. Not to mention you can transform just about any pie recipe into a slab pie.

Generally, slab pies usually serve 16 people, so they’re great for holiday parties when you’re feeding a crowd, Thanksgiving and Christmas dinner. I’m also more of a crust fan, so it’s a great way to make a pie with less “guts” and more crust.

What’s Inside the Caramel Apple Slab Pie?

I’ve got a secret for you… you don’t have to slice, dice, boil or melt anything! I am a huge fan of Duncan Hines’ Apple Pie Filling. It’s one of my not so secret pie hacks. Everyone always compliments it and asks for the recipe. Little do they know (well actually they do because I have no shame), it only costs $2 and you can buy it from any grocery store.

The other ingredient is, you guessed it, caramel sauce! You can use any caramel sauce you want. But I prefer using a thicker caramel to make the filling more rich, so I use caramel topping that is meant for ice cream.

Those are the only two ingredients you need for the filling!

When it comes to buying pie crusts, you just need to find the “ready to fill” type pie crusts, not the kind that are in a pan ready to go. I recommend buying 2 boxes, that way you have extra crust to cut into fun shapes for the top. I love this set of cookie cutters because it leaves an imprint on them, making them look like small leaves. Perfect for fall and winter treats!
