¡Ole ole, ole ole! Spicy Chicken Quesadillas

Spicy Chicken QuesadillasIf you’ve been following me for a little while, you’re no stranger to my love of Mexican food. 

I’m not a fan of over complicated meals. The only thing I’ll make that takes 8 hours is a set & forget crock pot soup. My life is chaotic and the last thing that I want to do is go to 4 grocery stores for a specific combination of herbs and random root vegetables I don’t know how to pronounce. 

One of my favorite things about Hatchery is that they deliver a tasting box of ingredients/condiments to your door step every month. I get super stressed out at the store trying to decide what new things to buy and normally just stick with the basics. Now, I get to try new things every month and see what works for me before making a commitment. 

Enter: Chi-Cho Sauce. Like me, you’re probably thinking… what the F is Chi-Cho Sauce? It’s a mystery sauce that works in just about any recipe. Ok so maybe it’s not a mystery… it’s a slightly sweet, garlicky hot sauce that you can use in anything from pasta to you guessed it, QUESADILLAS! You can also use it straight out of the bottle as a marinade or dipping sauce. 

I used Chi-Cho as a “marinade” for my chicken and also in my dipping sauce. You can substitute any hot sauce you like, but I recommend going with one that’s on the sweeter side. 

The first thing you need to do is sort out your chicken situation. I used leftover chicken breast and shredded it. You can also use rotisserie chicken. Add a few squirts of hot sauce, depending on how spicy you want it.

Here’s the Chi-Cho sauce. You can order it on the Hatchery site or pick out whatever hot sauce you want. I also used one Wholly Guacamole Mini pack… only 100 calories! 

 

Quesadilla Ingredients

 

Heat a pan (whatever you’ve got) on Medium Heat and either spray with non-stick cooking spray or add a dab of butter/butter alternative.

Pile your ingredients up and add some cheese! I went with a pretty basic Mexican blend. Use whatever your heart desires.

 

Cook the Dilla

 

Serve with a side of Spicy Sauce! Combine a little bit of Low Fat Sour Cream and Chi-Cho sauce for dipping!
