Funfetti Protein Balls
It’s been a while since I’ve posted a dessert recipe! So let’s get back to business and whip up some sweet treats! The best part is that the bite sized delights I made today are actually healthy!
Funfetti cake is my all time favorite dessert, hands down. I swear, when I get married my wedding cake will be a giant funfetti masterpiece! But realistically, I can’t eat cake every day. I know, such a bummer. But I was able to find the next best thing… Funfetti Protein Balls.
Funfetti Protein Balls
Protein balls are a great treat when you’re trying to stick to a healthy diet. These funfetti protein balls are also packed with plant based protein so they help keep you full for longer. They’re also great for a post workout snack or quick, on the go bite when you’re hungry in between meals.
They’re also legitimately so good! The texture is perfect and they are almost like eating cookie dough! Protein balls are my go-to snack when I have a craving for dessert! They’re so much healthier than grabbing a piece of candy and they actually keep you full!
Ingredients
- 5 scoops of Vanilla Protein Powder – I LIKE THIS ONE FROM ORGAIN
- 1 cup of Almond Butter
- 1/2 cup of Organic Agave
- Dairy-Free Chocolate Chips
- Natural Sprinkles (I bought mine on Amazon)
- 1/4 cup of Organic Shredded Coconut
- 2 tablespoons of Unsweetened Almond Milk
Directions
Protein balls are literally SO EASY to make! Grab a large bowl and mixer (or even a spatula) or use a KitchenAid Mixer. Did I mention they’re also vegan and gluten free!?
I start by combining the almond butter, agave, almond milk & about 3 scoops of protein powder. Then, I gradually add more until the texture is right. It shouldn’t be sticky, but also shouldn’t be crumbly. It should be similar to the consistency of cookie dough.
Then, add in your shredded coconut and desired amount of chocolate chips. I usually start with about 1/4 cup.
Once your protein mixture is combined, put it into your refrigerator for about 10 minutes to harden. This will make it easier to roll them into balls.
Using a spoon or a cookie scooper, scoop out ball and roll them in your hands to form small balls. Roll the balls in sprinkles and place on a baking sheet (I recommend lining it with parchment paper).
Place in the refrigerator for at least 10 minutes, or until you’re ready to eat them.You can also store them in the freezer. Place the baking sheet in the freezer for 10-20 minutes and then transfer the balls to a ziplock bag or freezer container.
They taste the best when they’re slightly thawed from freezer or from the refrigerator!
