The Prettiest No Bake Oreo Ice Box Cake
May grey is officially getting the best of me. I should be busting out all of my white jeans and dresses in preparation for summer, but all I’ve wanted to do is climb into bed and watch movies all day. Which means I haven’t been in much of a baking mood.
Tony’s favorite desserts generally involve Oreos. Mainly because it means there will be a box off cookies sitting in the pantry that he can sneak from. Lucky for him, my favorite cake “recipe” doesn’t involve an oven. It actually doesn’t involve any real skill, other than knowing how to stack cookies! The icebox cake is an American classic that most people don’t really know about. it’s a no-bake treat that literally doesn’t require any cooking or baking, but results in the prettiest treat you ever did see.

The Prettiest No Bake Oreo Icebox Cake
Ok so to start off, an ice box cake by American standard is just a dessert that consists of whipped cream and cookies. In other countries, it generally means it’s a chocolate ripple log type cake. The first time I ever made an icebox cake, I followed the directions on the back of a Nabisco Chocolate Wafers box. Basically, you just stack them to form a log, using the whipped cream to cement them together. Then, you leave it in the refrigerator (or the “icebox” as it used to be called) overnight. The cookies absorb the moisture from the whipped cream and turn into a “cake” which can be sliced. Traditionally, wafers are used for the recipe. But you know I’m anything BUT traditional, so I decided to make an icebox cake with two of my favorite ingredients: Oreos & Cool Whip!
How To Make An Icebox Cake
To get started, you’ll need the following ingredients:
- 2 boxes of Oreos – I used Birthday Cake flavored Oreos, but you can use any flavor you want!
- 2 containers of Cool Whip – I recommend using the original version, but they also make an Oreo Cool Whip that would be great!
- A large ziplock bag or pastry bag
- A cake plate or stand
- Toppings of your choice. I used rainbow sprinkles, but you could use crumbled cookies, coconut flakes, small candies, or really anything edible you can think of!
Directions
- To start, spread a little bit of Cool Whip on the base of your cake stand. This serves as the foundation for your cake. Keep in mind the stand will need to fit into your refrigerator.
- Then, put the Cool Whip into your ziplock bag or pastry bag. If you’re using a ziplock bag, trim the end off using scissors.
- Arrange 12 Oreos in a circle (9 cookies on the outside, 3 in the middle).
- Using your bag of Cool Whip, pipe it on top of the cookies. I used about 1/2 cup of Cool Whip. You can spread it evenly with a knife, or just press down as you stack more cookies.
- Continue stacking the Oreos, but stagger them as you go. This makes the cake more stable.
- Once you’ve reached your desired height, top with some more Cool Whip & spread it evenly with a knife or spatula.
- Top the cake with sprinkles.
- Refrigerate your cake for at least 4 hours, but it’s better if you leave it overnight.
- To serve, slice it just like you would a cake!
