Thanksgiving is over. If you’re like me, you’re still in a food coma from last night. Now, we’re faced with the aftermath: leftovers. Don’t get me wrong, I love leftovers. But after 6 straight days of Thanksgiving food, I get a little bored.

There are tons of ways to reuse your turkey and mashed potatoes. Make sandwiches, whip up a soup, add some bacon to the potatoes, etc. But what are you supposed to do with all of that leftover pumpkin pie?

Obviously… I have the answer. You make a pumpkin pie milkshake! If you want to get really sneaky, call it a “smoothie” and make it for breakfast. Pumpkins are basically vegetables right??

I’m going to go out on a limb here and say this recipe could be universally used for any type of pie. I really doubt you could ever make a milkshake out of pie that wouldn’t be amazing, unless it’s a Shepherd’s Pie!  BUT, since most holiday parties have pumpkin pie, we’re sticking with it for the recipe. I’d also like to note that it’s almost impossible to mess this up. You don’t even technically need to measure anything. Just eyeball it. Worst case scenario, you’ve got an extra thick, extra delicious shake.

How to Make the Leftover Pumpkin Pie Milkshake

Grab a blender to get started. You can use a standard blender or a hand blender, it doesn’t matter. Make sure to blend until smooth.

Slice a large piece of pumpkin pie and throw it into the blender. The larger the piece of pie you cut, the more it’s going to taste like pumpkin. Then, scoop 2-3 large scoops of vanilla ice cream. I like using vanilla bean, but either works.

Pour about 1/4 cup of milk in. I used almond milk. If you’re vegan, you can use dairy free ice cream and milk. Oat Milk is another tasty alternative Woohoo vegan milkshake! Any type of milk will work, you’re just using it to thin out the mixture. If you want more pumpkin flavor, add a pinch of pumpkin pie spice for extra

Turn the blender on high and blend until smooth, aka standard milkshake texture. If it’s too thin, add a little more ice cream or pie. If it’s too thick, add more milk! I don’t recommend using ice because it will water down the flavor.

That’s literally it! I served mine in a mason jartopped it with whipped cream & a little mini slice of pie. Pumpkin pie in a glass! You could even add some graham crackers on top. Or if you want to turn it into a “Pumpkin Pie Frappuccino” add a shot of espresso!
