Loaded Spicy Chipotle Queso Mexican Pizza
The first time I ever ordered a Mexican Pizza was at Taco Bell. Literally everything at Taco Bell is amazing. Unfortunately, I can’t live off off of T-Bell. Recently, Tony and I have been on a major pizza making kick. We got a new grill and love throwing pizzas on the bbq! It’s literally one of the easiest, tastiest dinners. We’ve started getting creative, throwing pizza making parties for our friends & putting out tons of fun toppings. Everything from leftover bbq chicken to buffalo Alfredo sauce. The next obvious creation on our list was a Mexican Pizza. Let me tell you… it did not disappoint.
Easy Mexican Pizza Recipe
I recommend starting with pre-made dough. A lot of grocery stores sell par baked dough. This is basically a “half baked” pizza crust. It’s ready to go and doesn’t require any kneading or work. Any dough works though. If you have a homemade recipe, use it! It’s okay if you don’t. If not, you can buy any ready-to-go option.
Also, if you’re vegetarian, vegan or GF, you can totally adjust the recipe as well. Vegetarians, you can opt for vegetarian beans & leave out the meat. If you’re vegan, leave off the cheese or opt for a vegan version. If you’re gluten free, just use a GF pizza crust! You can also add more vegetables or a meat substitute if you’re looking to add a protein.
Ingredients
Here’s a list of everything you’ll need:
- Pizza Dough or Ready Made Pizza Crusts
- 1 16 oz. can of Refried Beans
- 1 7 oz. can of Chipotle Peppers in Adobo Sauce
- Ground Beef or Ground Turkey
- Taco Seasoning (this is my favorite)
- Pickled Jalapeño Peppers
- Queso Sauce (these individual packets are super convenient)
- Chopped Onion
- Chopped Cilantro
- Shredded Queso Blanco or Mozarella
Directions
Prepare the dough – depending on the directions, you may need to pre heat it. If it’s ready made, you’ll just start putting the toppings on. If not, you may need to pre-cook it slightly.
Prepare your meat according to the directions on the taco seasoning packet. Then, set aside.
In a small pan or microwave safe bowl, heat up your beans. I like to use microwave safe tupperware because it’s easier to store and clean up. Set aside about 2 tablespoons of the Adobo Sauce. Combine one can of Beans & the remainder of the can of Peppers & Sauce. Then microwave for about 1 minute, or until it’s heated through.
Heat your Queso Sauce according to the directions & add the 2 tablespoons of Adobo Sauce. Not only does it add flavor, it makes the sauce a little easier to drizzle!
Now you’re ready to assemble your pizza!
Spread an even layer of beans on the pizza crust. Then, add a layer of cheese and meat.
Heat in the oven (according to your crust directions) until the dough is cooked through and cheese is melted.
Finish by typing with Queso Sauce, Onions & Cilantro & Pickled Jalapeño Peppers!
