S’mores Mocha Freezy Pops
Even though summer is almost over, the heat in San Diego isn’t going anywhere! It’s been so flipping hot out lately. A few days ago, I was making my breakfast, joking about how it was too hot to eat real food and that I wished I could just have breakfast ice cream. Funny, right? WRONG! Totally possible!
I realized I some Iced Coffee in the fridge (major requirement in the summer) and started thinking… Iced Coffee freezes right? What if I found a way to freeze my coffee? What if I turned my Iced Coffee into a popsicle!?
Ahmmmmazing right? And you better bet your booty I took these popsicles to the next level. I made Smore’s Mocha Freezy Pops!

Here’s what you’ll need:
- International Delight Mocha Iced Coffee
- Chocolate Chips
- Marshmallow Bits
- Mini Chocolate Chips
- Popsicle Molds (and sticks if needed)
So if you buy the ID Mocha Iced Coffee (available in a light version too), this recipe is super simple. All you do is pour the coffee into the popsicle mold & freeze. If you don’t have popsicle molds, you can find them here!
Once they’re frozen (I gave it 4 hours), pop the pops out and place them onto a baking sheet. I lined mine with parchment paper. Melt some chocolate chips in a bowl (microwave for 30 seconds to 1 min). Then, drizzle the melted chocolate over the popsicles. Sprinkle the Mini Chocolate Chips and Marshmallow Bits on top. Freeze again for about 15 – 20 minutes.
