Peanut Butter Popcorn
One of my all time favorite, go-to snacks is… POPCORN!
I could eat it every day and it wouldn’t’ get old. If you follow my snapchat (@easchow), you know I love making “Fancy” popcorn. Normally it involves cheese and seasoning. But today I got a special delivery of White Chocolate Cinnamon Peanut Butter from Better Off Spread. Obviously I loved the brand to start because the butters are all named after Rock Ballads. I mean “Every Rosemary Has It’s Thorn” and “Master of Pumpkins“! Not to mention they’re TO DIE FOR! So good!
So… I decided to take my Fancy Popcorn down a sweeter path. The great thing about this recipe is that you can substitute any type of Nut Butter you want. Almond Butter? Sure! Crunch Peanut Butter… DUH! You can even make it Vegan if you want!
So here’s what you’re gonna need:
– 1 Bag of Popcorn (I use plain, unsalted but it really doesn’t matter)
– 1/8 Cup of Nut Butter of your choice
– 1/8 Cup of Butter (or butter alternative if you want it to be Vegan)
– 1/3 Cup of Brown Sugar
– 10 Marshmallows
Step One: Microwave your popcorn according to the directions on the bag.
Step Two: Combine all of the ingredients in a large microwave safe bowl.
Step Three: Microwave the ingredients for 30 seconds at a time. Mixing in between, until it’s nice and smooth!
Step Four: Combine the “goop” and the popcorn. Mixing until it’s evenly coated.
ENJOY!!! You can save it if you want in a ziplock bag or air tight container, but I doubt there will be any leftovers!
