THIS IS NOT A DRILL: 3 Ingredient Ice Cream Mug Cake Recipe
Alright, who else was bouncing off of the walls when Ben & Jerry announced they’d be selling Non-Dairy flavors? Anyone… anyone?
Little known fact, I actually don’t drink milk. Ice cream is my achilles heel, but it makes me super sick. I can eat hard cheeses in small doses (hello cheese plate), but melted cheese, milk & ice cream do not leave me feeling great. So, I normally substitute Almond or Soy Milk in most of my recipes.
I love me some Ben & Jerry’s. They’re my kind of ice cream men, packing as many flavors and treats into one pint as possible. I stumbled upon their awesome new Almond Milk Ice Cream at the store the other day and HAD to buy them all to try. All or nothing, am I right?
Anywho, after binge watching some Gossip Girl & trying all of the flavors, I was on a serious sugar bender. Only one thing happens when I’ve consumed enough sugar to fuel a trip through the Candy Cane Forrest, I start brainstorming some serious recipes.
So, what could I do with all of these DELICIOUS ice creams (other than eat them straight out of the carton)? MAKE A CAKE! Duh!
So, what’s better than a cake? A 3 Ingredient Microwave Cake of course! The awesome part about this recipe is that even though it only requires 3 ingredients, you get so much more bang for your buck when you choose an Ice Cream filled with other treats! Did I mention it works for ANY type of Ice Cream? Dairy Free or Regular!
To start, you need half a pint of Ice Cream. That’s half of a Ben & Jerry’s container. I went with Coffee Caramel Fudge. The cool thing is, if you’ve already eaten half of it, you can use the container as a mixing bowl! Woohoo, no dishes! You want to make sure it’s nice and melty. Either leave it out on the counter for a while or pop it into the microwave.
Then, you’re going to whisk in 1/3 cup of Flour & 1/2 teaspoon of Baking Powder. That’s it. Once it’s mixed through, pour it into the microwave safe mug of your choice!
Pop it into the microwave for 2 minutes. I recommend checking every 30 seconds or so to make sure it doesn’t explode.
You can serve it with another scoop of ice cream on top, powdered sugar (my personal fave), whipped cream, or just plain and simple deliciousness!
